This survey was for the purpose of setting standard for the basic materials used in the study of food and nutrition particularly fat intake of Koreans, and the interrelationship of fatsoluble vitamins.
The survey was conducted in 5 places (Seoul, Taejon, Ulsan, sokcho, and Munsan) and was classiified by urban area, rural farming area and fishing village. The sample of 234 middle class subjects (108 men and 126 women) were divided into 4 age groups, and a questionnaire made up by the research team was distributed to the subjects.
In the investigation of the dietary structure of fat and fat soluble vitamins, it was found that 1) awareness and consumption of foods high in fat was at a generally high level, and the younger subjects had a higher level of fatty food intake than other age group; 2) most respondents consisdered their fat intake to be average or under average which they ascribed to their dietary habits; 3) middle aged women had a higher tendency to select fatty foods than older or younger women; 4) almost all the respondents knew about the relationship of fat and fat-soluble vitamin having obtained their nutritional information for mass media such as radio, newspaper and television.
In the investigation of the changing patterns of fat consumptipn and fat source it was found that 1) in the cooking method, frying and western style salad was the major source for fat consumption. Fat consumption through intake of meat grouts food (meat, fish and its processed products), cooking oil, rice and other grains and other fat content food were 19.849 (56.73%), 5.899(16.84%), 5.72g (16.36%) and 3.52g(10.07%) respectively; 2) the total fat intake average was 34.97g and the urban area was the highest with 39.95g, next was the fishing village which was 34.68g and the rural area was 30.28g. This data was increased when comparing with the figures before.
The intake of vitamin A and the intake of retinol through animal food leas 401IU (4.77%). Also the intake of β-carotene through vegetable food was 8023IU (95.23%). This study showed that main vitamin A sources for Korean diet were green-leafy vegetables.
