Bean is one of very nutritious grain including protein, and soybean curd(tofu) made of bean is a preferred food item worldwide. In the traditional process of tofu, soybean-soaking process was the most time-consuming stage. In order to overcome this problem, tofu was made in a more effective and faster way by using a soybean-grinding disc units and by skipping soybean-soaking process. During the soybean grinding process using the three consecutive cutter and grinder units, shattering and swelling of soybean particles were simultaneously occurred and thus the processing time required to make soybean curd was reduced to 45 minutes from 12 hours. When compared with commercial tofu products, the soybean curds manufactured in this process had similar contents of solid, crude protein, and crude lipid. The sensory test of odor and taste couldn't find any significant differences between the fotu from this study and commercial products. The rheological analysis showed that the soybean curd made in this process was more proper for the use of pan-fried cake rather than pot-stew use.

고령화 사회 전통문화의 전승과 소비-쿵주(空竹)를 중심으로-

In 2003, UNESCO adopted the Convention for the Safeguarding of the Intangible Cultural Heritage. In the same year, the Chinese government embarked on a cultural heritage protection project to restore China ‘s traditional culture. The country’s local governments also joined forces in implementing projects for discovering traditional cultural heritages. In 2005, 226 leading cultural transmitters were placed on the list of national cultural heritages. This resulted from the government’s efforts to compile a list of major cultural heritages in close cooperation with the private sector and establish a systematic management system. Diabolo (空竹) was also discovered alongside the country’s cultural heritage conservation movement and was listed as a national cultural heritage in 2006. As a folk game that became famous upon a group performance at the Beijing Olympics, diabolo has rapidly penetrated into elderly citizens. The existing diabolo association’s expansion into China’s provinces resulted in various cultural exchanges, making it grow into a new item for urban festivals. Diabolo is assessed as a symbolic heritage of urban culture, which has properly embraced intergenerational demands and changing times. In particular, the enthusiastic engagement and activities of performers who are called “the first generation of diabolo” contributed to the positioning of diabolo as a popular folk game. They have driven the urbanization and educationalization of traditional games and boosted the consumption of China’s traditional culture across all generations. Moreover, they have taken the lead in educating and distributing diabolo as an intermediary who facilitates friendship and exchanges, flexible human relations, and regional solidarity. A culture without interactions with generations can hardly attain public acceptance in the name of tradition. As a medium for the sharing and remembrance of China’s traditional culture across time, diabolo has connected generations and regions, thereby eliciting their successful collaborations. For this reason, diabolo was selected as a major sporting event at universities and expanded itself into the domain of sports. Moreover, preparations are now underway to make it a demonstration sport at the coming Asian Games. The cultural phenomenon that diabolo is consumed in a new pattern by transcending time and space as well as generations will likely become a significant case that helps explore the relationship between the continuous development and the intergenerational transmission of traditional culture in an aging society. 2003년 유네스코가 문화유산보호협약을 선포했다. 중국정부는 이 시기를 전통문화 복원을 위한 문화보호공정 원년으로 인식했다. 지역정부도 전통문화발굴사업에 화력을 모았다. 2005년 226명의 대표 전승인이 국가급 문화유산 명단에 올랐다. 정부가 민간과의 긴밀한 공조 속에 전국의 주요 문화유산 목록을 집대성하고 체계적인 관리시스템을 구축한 결과다. 쿵주(空竹)도 문화보호공정운동과 함께 발굴되어 2006년 국가급 문화유산으로 등재됐다. 베이징 올림픽에서 단체공연을 선보이며 유명세를 높였다. 이후 노년층에 빠르게 흡수되었다. 협회 조직이 지방으로 확대되면서 다양한 교류전이 열렸고, 도시축제의 새로운 아이템으로 성장했다. 쿵주는 세대 간 요구와 시대의 변화를 적절하게 수용한 도시 문화의 상징적 유산으로 평가받고 있다. 특히, 쿵주 1세대라 불리는 연희자들의 적극적 참여와 활동으로 대중 놀이로 자리 잡을 수 있었다. 이들은 전통놀이의 도시화, 교육화를 견인했고, 세대를 아우르며 전통문화의 소비를 촉진시켰다. 또한 친선교류, 유연한 인간관계, 지역 간 연대를 잇는 매개자로서 쿵주 교육과 보급에도 앞장섰다. 세대와 교감이 없는 문화는 전통이란 명목만으로 대중적 관문을 넘기 어렵다. 쿵주는 시대를 넘어 전통문화를 공유하고 기억하는 소재로써 세대와 지역을 연결하며 성공적 협업을 이끌었다. 때문에 대학의 주요 체육과목으로 선정되었고, 스포츠 영역으로 범위를 확대할 수 있었다. 다가오는 아시안게임 시범 종목을 위한 준비 작업도 한창이다. 쿵주가 시공과 세대를 초월해 새로운 패턴으로 소비되는 문화현상은 고령화 사회 전통문화의 지속적인 발전과 세대 간 전통문화의 전승관계를 탐색하는 의미 있는 사례가 될 것으로 기대한다.

Solubilization Conditions for HydrophobicMembrane Protein, Oleosin, in Soybeans

Oleosins are amphipathic proteins found in soybeans that give stability to oil-bodies by surrounding them. Furthermore, oleosins have broad biotechnological applications in protein purification and in immobilization as a tagging partner. In this study we provide the proper combinations of detergents and chaotropes for solubilization of oleosins. The solubilization effects of each detergent were compared by the results of SDS-PAGE analysis, from the density measurement of each band using an image analysis program. Among the twelve chemicals tested, 3-(decyldimethylammonio) propanesulfonate inner salt (SB 3-10), nonaethylene glycol octylphenyl ether (NP-40), and n-dodecyl-β-D-maltoside (DM) were determined to be effective for oleosin solubilization. In addition, urea, thiourea, and reducing agents played roles in enhancing the effects of the detergents. The best results were obtained with 2.5% of each detergent in combination with 4 M urea and 2 M thiourea at room temperature. The zwitterionic detergent, SB 3-10, is recommended as the best non-denaturant for the solubilization of soybean oleosins with the advantage of its easy removal by dialysis due to its low molecular weight and a high critical micelle concentration.

One of the most common uses of osseointegration has been to supply patients with craniofacial defects with a bone-anchored epitheses (BAE). BAEs are usually used in the craniofacial defects such as congenital external ear anomalies or facial defects after cancer surgeries or trauma. We report a case of a 26 year-old woman with traumatic auricular amputation due to a traffic accident 4 years ago and a case of 23 year-old man with congenital ear deformity. They took osseointegrated implantations for an auricular prosthesis and are using it without complications. BAEs can be used with good functional and esthetic outcome for artificial auricular reconstruction.

Pressure ulcer is usually detected in bed-ridden patients but it’s not easy to detect a pressure ulcer in ambulatory people. Hansen’s disease is developed by infection of Mycobacteria leprae and shows various skin lesions and peripheral neuropathy. We found ambulatory Leprotic patients with auricular pressure ulcer. Therefore we report these cases with literature review.
