더덕과 일부 한약재 열수추출물의 혼합 비율에 따른 생리활성

The aim of this study was to investigate the physiological functionalities of Codonopsis lanceolata, Glycyrrhiza uralensis, Chaenomeles sinensis, Crataegus pinnafida, and their mixtures. We also determined their antioxidative, fibrinolytic, and αglucosidase inhibitory activities. The antioxidative activities of Codonopsis lanceolata, Glycyrrhiza uralensis, Chaenomeles sinensis, and Crataegus pinnafida were 79%, 88.3%, 89.9%, and 89.3% respectively. Their fibrinolytic activities were 0.80plasmin unit/ml, 0.57 plasmin unit/ml, 0.52 plasmin unit/ml, and 0.53 plasmin unit/ml respectively. The αglucosidase inhibitory activity of Codonopsis lanceolata was 25%. The 10fold diluents of Glycyrrhiza uralensis, Chaenomeles sinensis, and Crataegus pinnafida showed αglucosidase inhibitory activities of 93.6%, 65.3%, and 61.3% respectively. In antioxidative activity tests of the medicinal plants mixtures at various ratios, the mixtures of Glycyrrhiza uralensis, Chaenomeles sinensis, and Crataegus pinnafida with Codonopsis lanceolata showed antioxidative activities of approximately 90%. In fibrinolytic activity tests mixtures(1:1) of Codonopsis lanceolata with Chaenomeles sinensis and Crataegus pinnafida exhibited increases of 23% and 24% in activity respectively. In αglucosidase inhibitory activity tests, a mixture (4:1) of Codonopsis lanceolata and 10fold diluted Glycyrrhiza uralensis showed an inhibitory activity of 98%, a mixture (3:1) of Codonopsis lanceolata and 10fold diluted Chaenomeles sinensis showed an inhibitory activity of 69.6%, and a mixture (1:1) of Codonopsis lanceolata and 10fold diluted Crataegus pinnafida showed an inhibitory activity of 50.2%. In conclusion, the mixtures of Glycyrrhiza uralensis, Chaenomeles sinensis, and Crataegus pinnafida with Codonopsis lanceolata will be used as a material for the development of biofunctional foods.

This study was attempted to investigate the occurrence and the partial characteristics of pectinesterase(PE) in cucumbers. And the involvement of endogenous cucumber PE with the formation of insoluble pectic acid, in the presence of endogenous or added calcium ions, was also studied. The results of this study are as follows: 1) PE activity was detected in whole cucumber homogenate. 2) The optimum pH and temperature of this enzyme were found to be 8.5 and 50℃, respectively. 3) When PE extract was added to 0.25% pectin solution, pectin gel was formed. The time required for the formation of pectin gel was reduced when the pectin solution was adjusted to the optimum conditions for PE activity(pH 8.5, 50℃) and CaCl₂was added. 4) Cucumber juice which was heated to 100℃ for 10 minutes failed to form any insoluble pectate precipitate. The formation of precipitate in cucumber juice was accelerated by preheating to 50℃, adjusting to pH 8.5 and addition of CaCl₂. 5) These results can be interpreted that endogenous PE in cucumber juice demethylates pectin, allowing interlinking of pectin molecules via divalent cation (Ca^(++)) and thus forming insoluble Ca-pectate. Therefore additional firming effects of cucumber can be expected to be obtained through activation of PE in conjunction with calcium ions.

The purpose of this study was to improve the qualitative satisfaction of meal service for low-income children in Wonju. In interview with 287 subjects(meal box user 17.4% and card user 82.6%; boys 48.4% and girls 51.6%; elementary students 44.4%, middle school students 33.0%, high school students 22.6%; both parents family 29.8% and single parent or without parent family 70.2%) by consent from their guardians, we surveyed on self-esteem of subjects and the relationship between their characteristics and self-esteem. For the data analysis, Cronbach’s a, t -test, Pearson’s correlation coefficient, and ANOVA analysis using Tukey's multiple range test were used. The major findings were as follows: First, the result of factors analysis on ten variables about self esteem, three attributes were extracted as follows inferiority complex, self-denial, self-affirmation(Cronbach α: 0.792, 0.772, 0.717, respectively) Second, the degree of self-esteem was significantly different by gender, grade, the purpose of eating, subjectively perceived health status, performance level of three basic principles of eating habits(well-balanced eating, regular eating, pleasant eating), experience and preference of cooking, and extent and acceptability of opening supported meal service. Finally, The subjects of high self-affirmation status were interested in improving five attributes of meal service; such as diversity, sufficient amount, intake of good nutrition, selection of favorite foods and proper temperature
수은중독의 임상증상과 생물학적 폭로지표간의 연관성에 관한 조사 연구

This research focused on the association between clinical symptoms of mercury poisoning and mercury concentration in urine and blood. A total of 100 manual workers and 55 office workers in a fluorescent lamp manufacturing factory were selected and history-taking and physical examination were done from September 1988 to Octorber 1989. The results were as follows : 1. The urinary mercury concentration of manual workers in average was 125.9 ㎍/l(5.0-469.0㎍/l), which showed 10 times higher than that of the office workers, and the blood mercury concentration of manual workers in average was 6.3 ㎍/l00ml(0.2 -60.2 ㎍/l00㎖), which was 6.6 times higher than that of office workers. 2. The frequency of mercury poisoning symptoms appeared was higher in manual workers than in office workers. Among the symptoms, anorexia(33.0%), shyness(15.0%), gingivitis(11.0%) and stomatitis(11.0%) showed significantly higher in manual workers than in office workers. In every item of symptoms, the manual workers showed a higher average of urinary and blood mercury concentration than that of the office workers 3. The average urinary mercury concentration of symptom-holders(shyness, loss of memory and anorexia) among manual workers was higher than that of non-symptom-holders. The average blood mercury concentration of symptom-holders(excessive sweating and blood mercury concentration than that of the office workers. anxiety, loss of weight) was higher than that of non-symptom-holders. 4. Shyness, loss of memory, loss of patience, anorexia, loss of weight, dyspepsia, excessive sweating, respectively showed increase of the number of symptom - holders according to the urinary mercury level. However, there was no increase of the number of symptom-holders according to the blood mercury level.
