        조선후기 유서 지식의 성격

        This article aims to examine the characteristics of knowledge that was collected and transferred by way of yuseos in the late Joseon Dynasty. A yuseo is characterized by its stylistic nature of gathering, itemizing, classifying, and verifying of knowledge, making it effective for collecting and transferring large amounts of knowledge. This allowed it to properly reflect the expansion of knowledge after Japanese Invasion of Korea in 1592. In principle, polymathy was not rejected in Neo-Confucianism. The wariness of Neo-Confucianists against polmathy was strengthened together as knowledge increased. The differences in positions and directions between polymathy and Neo-Confucianism have become more clear since the mid-18th century, with interest in the natural history or artisanal arts spreading to some intellectuals. Ojuyeonmun Jangjeonsan’go was one of the achievements of that process. Yuseo, on the one hand, exploited the tradition of the study of names since Han dynasty. The study of names was to draw classics as a standard for verification of knowledge and to justify hierarchical worldviews. A re-recognition of the mathematical order of things appeared in parallel with the interest in natural history at Ojuyeonmun Jangjeonsan’go. It was certainly done under the influence of the West-Learning. But it still took the tone of traditional Sangsuhak, and yet not at all had the value of methodology that covers the whole work. Until then the principle of things in yuseos in the late Joseon Dynasty did not deviated significantly from the traditional knowledge system. 이 글은 조선후기 類書를 통해 집적⋅전승된 지식의 성격을 검토하는 데 목표를 둔다. 유서는 지식의 회집, 항목화, 분류, 변증이라는 문체 성격을 공유하는 것으로서, 임란 이후 지식의 팽창을 적절히 반영해 낼 수 있었다. 주자학은 원칙적으로 박학을 부정하는 것이 아니었다. 조선에서 박학에 대한 도학적 경계는 지식이 증대하면서 함께 강화되었다. 18세기 중반 이후 박물 또는 명물도수에 대한 관심이 일부 지식인들에게 확산되면서 양측의 입장과 지향 차이는 좀 더 분명해졌다. 『오주연문장전산고』는 바로 그런 과정의 성취 가운데 하나였다. 유서는 한편으로 한대 이래의 명물학 전통에 기대어 있었다. 명물학은 고전을 지식 변증의 기준으로 끌어들이고 만물 사이의 위계적 질서 관념을 정당화하는 것이었다. 『오주연문장전산고』에 이르러 박물학에 대한 관심과 병행하여 만물의 수리 질서에 대한 재인식이 나타났다. 그것은 분명 서학의 영향하에 이루어진 것이었지만, 여전히 전통적인 상수학의 외피를 걸치고 있었고, 그나마도 아직 저작 전체를 관통하는 학문방법론 차원의 새로운 함의를 가지는 것은 아니었다. 조선후기 유서의 ‘물리’는 아직 전통적인 지식체계를 크게 벗어나지 못하고 있었다.

        카무트 전립분을 대체한 아메리칸 와플의 품질 특성

        The study was to investigate the quality characteristics of American waffles substituted with 0, 25, 50, 75, and 100% of kamut whole wheat flour (KWF). The KWF samples had maintaining the specific gravity of the batter until the 25% substitution. The spreadability decreased as the ratio of the KWF increased, and the pH of the 100% substitution sample were the lowest. The KWF samples had increasing baking loss rates until the 75% substitution while decreasing the water activity. Lightness and yellowness significantly decreased with increasing the KWF while redness increased. Hardness, chewiness, and gumminess of the 25% substitution sample were the highest, while the springiness and resilience were maximum with the 100% substitution. The KWF samples had increasing overall acceptability, acceptability of color, flavor, and texture until the 50% substitution. The characteristics intensity rating of crust color, bran flavor, and sweetness increased with increasing the KWF. The KWF samples had significantly higher crispiness than the control group. The frequency of the bran flavor, sweetness, nuttiness, and unpleasant increased while the egg and milk flavor, and flour taste decreased. These results suggest that the substitution of the 25~50% KWF could be the optimal to improve the quality characteristics of American waffles.

        모바일게임의 전문가 평가와 대중적 인기에 관한 실증 연구: 국내 이동통신사 사례를 중심으로

        본 연구에서는 이동통신사에서 모바일게임 출시 이전에 높은 완성도와 시장성을 지닌 모바일게임을 선별하기 위해 내부적으로 운영하고 있는 ‘게임 평가단’이라는 전문가 집단으로부터 높은 평가를 받은 게임이 과연 실제 시장에서도 대중적 인기를 널리 누릴 것인지에 대해서 살펴보았다(연구문제 1). 또한 모바일게임이 시장에서 성공을 거두는데 있어 영향을 미칠 수 있는 여러 모바일게임 특성변수들 가운데, 어떤 변수가 과연 모바일게임에 대한 ‘전문가 집단의 평가’ 또는 ‘대중적 인기’에 유의한 영향을 미치는지를 알아보았다(연구문제 2). 연구결과, 첫째, 모바일게임에 대한 대중적 인기와 전문가 집단의 평가 간에는 약한 정(+)의 상관관계가 있음을 확인하였다. 둘째, 전문가 집단과 일반 게임유저들은 모바일게임 평가에 있어서 전문가 집단의 경우 게임의 디자인, 가격, 사운드, 난이도, 창의성이, 일반 게임유저의 경우 게임의 디자인, 장르, 사회적 유행성이 모바일게임 평가에 유의한 영향을 미치는 것으로 확인되었다. The present study addresses the following research questions for the case of mobile games: First, do discrepant(or shared) tastes produce a negative(or positive) correlation between popular appeal and expert judgments? Second, among the market success factors of mobile games, what are the determinants of popular appeal versus expert judgments for mobile games (i.e., what determines the tastes of ordinary mobile game users versus professional mobile game evaluation board)? Our findings for the first research question show a statistically significant but relatively weak positive correlation between popular appeal and expert judgments, reflecting a small degree of shared tastes between them. With respect to the second research question, expert judgments are explained more strongly by such factors as price, design, sound, creativity, and difficulty, whereas popu-lar appeal is explained more strongly by such factors as design, game genres, and social popularity.

        18세기 北學論의 문명론적 함의에 대한 검토

        Chosun's scholars, who proposed Bukhakron(北學論) in 18th century, argued that Chosun had to accept the developed civilization of Quing China. What was remarkable in Quning civilization was various production tools and living things. The scholars of Bukhakron(北學論) not only tried to make people's living condition more efficient and convenient by improvement of production tools and living things, but also pursued to establish a totally new culture or civilization. In that sense, Bukhakron(北學論) had an aspect to theory of civilization reconstruction. In Bukhakron(北學論), we can find the vestiges of toadism to chinese culture as well as deconstructing phase of that toadism. We can find also at a time the viewpoint that distinguishes between fact and value, and the viewpoint that does not in Bukhakron(北學論). The scholars of Bukhakron(北學論) seemed to think the newer the better, since they believe that there is a progress in history. They did not any more keep the viewpoint that there was a center(China) and the peripheral(Chosun), instead they started to compare the east(Asia) to the west(Europe). In a word, Bukhakron(北學論) was a landmark to show that the scholar's viewpoint on civilization had been changed to the modern one in 18th century.

        프락토올리고당의 첨가가 딸기잼의 품질특성에 미치는 영향

        Quality characteristics of strawberry jams made of 2 different strawberry cultivars, Bogyo-joseng and Suhong, with 25, 50, 75, 100% fructo-oligosaccharide in place of sucrose were evaluated. Moisture content of Suhong jam was higher than Bogyo-joseng jam. pH of Bogyo-joseng and Suhong jam was not different. The lightness, redness and yellow-ness of Bogyo-joseoung jam were higher than those of Suhong jam. Spreadmeter value of jams decreased with addition of fructo-oligosaccharide. The sweetness of Suhong jam was higher than Bogyo-joseng. Reducing sugar content of Suhong jam was higher than Bogyo-joseng jam. More of fructo-oligosaccharide added, reducing sugar content of jam increased. Residual anthocyanin in Bogyo-joseng strawberry jam was decreased by addition of fructo-oligosaccharide. However, the residual anthocyanin content of Suhong strawberry jams with fructo-oligosaccharide was lower than that of sugar-only control jam with an exception of 50% fructo-oli-gosaccharide jam. The 50% fructo-oligosaccharide jam had a higher residual anthocyanin content than sugar-only jam. As the addition rate of fructo-oligosaccharide increased, springiness and cohesiveness of jam increased, while resilience decreased. In sensory evaluation, Bogyo-joseng strawberry jams obtained highest score with 50% fructo-oligosaccharide, while Suhong strawberry jam was favored most with 25% fructo-oligosaccharide.
