        산지 방목 유제품의 Value Chain 활성화를 위한 조사 연구

        This study was carried out to investigate the micro-agribusiness realities of dairy farms by surveying both farmers' opinions and consumers' recognition of dairy farm products for in a value-chain analysis. In most cases, dairy farms produced fermented milk for sales and to prepare cheese both for sales and for providing the necessary material for farm visitors. Value-chain analysis did not seem to be a viable strategy for dairy farmers, except when assessing the quality of farmstead milk products in comparisons of dairy farm milks and commercial milk products. Consumers had a wide range of experience with milk products and had no willingness to buy products from dairy farms because of the high cost and the lack of product diversity. Our findings established three strategies for improving the economic feasibility of dairy farms. First, the price should be reduced by adopting a production balance to establish a farm-gate price, i.e., not as quota milk but as surplus milk. Second, consumers should be educated on the prescription of cheese at home. Third, a value-chain based on cooperative partnerships should be established among dairy farms. In addition, to improve the consumers' satisfaction on the diversity and quality of farm dairy products, developments of new value-added milk products made from the milk of cows allowed to graze on mountain pastures are needed.

        유기 조사료 급여 농가의 영양소 균형 및 유생산성 평가

        전라북도 고창 조사 지역 내 유기 낙농 농가 수는 연도가 지남에 따라 증가하지 않았지만, 전체적인 사육규모와 사육두수는 증가하였다. 연 평균 유량은 국내 검정 농가 평균에 비해 유기 낙농가가 최대 9 kg/d가 낮았지만 유지방과 유단백 함량에서는 큰 차이를 보이지 않았다. NRC (2001)의 사양표준 프로그램을 이용하여 영양소 공급 수준을 평가한 결과, 급여 사료의 에너지 비율 특히 비구조탄수화물의 비율을 감소시킬 필요가 있으며, 또한 대사단백질 및 섬유소 비율을 증가시켜 전체적인 영양소 공급 수준을 조정한다면 착유우의 건강상태 및 유생산성이 개선될 것으로 생각된다. This study was conducted to evaluate the milk productivity and nutrient balance in organic dairy farms located at Gochang-gun of Korea with different feed sources. The total number of organic dairy farms was 12 in 2012, 13 in 2013, and 14 in 2014. The numbers of farms and dairy herds were increased each year. The average milk yields in 2012, 2013, and 2014 were 25.5, 24.6, and 24.4 kg/d, respectively. The average milk fat contents in 2012, 2013, and 2014 were 3.5%, 3.6%, and 3.7%, respectively. The average milk protein contents in 2012, 2013, and 2014 were 3.3%, 3.4%, and 3.4% in 2012, 2013, and 2014, respectively. Although the average milk yield of organic dairy farms was 9 kg/cows/d less than the average milk yield of other dairy farms in Korea, milk fat and protein contents of organic dairy farms were higher than those of other dairy farms. Alfalfa hay, oat hay, corn silage, rye grass silage, Sudan grass silage, rice straw, and barley silage were commonly used as forage sources in organic dairy farms. The average silage intake (15.6 kg/cow/d) of organic dairy farms in 2013 was higher (P < 0.05), while the average hay intake (5.1 kg/cow/d) in 2014 was higher (P < 0.05) than that of other feed intake. Net energy for lactation ($NE_L$) and metabolizable protein (MP) were calculated in accordance with NRC (2001). Net energy for lactation intake was higher (P < 0.05) while MP intake was lower (P < 0.05) than NRC recommendation values in 2013 and 2014. These results indicate that domestic organic dairy farms should use feed considering energy and protein balance recommended by NRC.

        Economics of Small Scale Dairy Farming in Bangladesh under the Government Support Programme

        In this study the financial performance of small scale dairy farms participating in the government subsidy programme and the impact of this government intervention on the number of animals owned, production and consumption of milk and labour employment in the farm households have been examined. After receiving the subsidy, dairy farmers expanded their herd size. The major changes occurred in the ownership of calves, heifers and cows in all categories of farms. Significant increases in production and consumption of milk as well as in labour employment were observed. The rates of increase for all the parameters studied were much higher in farms adopting cross breeding compared to those in only local-breed farms. The analysis showed that dairying was a profitable business. However, profitability was greater with cross-bred than with local-bred animals.

      • Traditional Sri Lankan Fermented Buffalo (Bubalus bubalis) Milk Gel (Meekiri): Technology, Microbiology & Quality Characteristics

        Meekiri (sometimes also known as Mee-Deekiri); fermented buffalo milk gel is a deep-rooted dairy product in Sri Lankan food culture and the production of Meekiri plays an integral part in the livelihood of rural farming. Meekiri consumption is widespread irrespective of geographic boundaries, across the cultural and/or ethnic communities. In Sri Lanka, buffalo milk is predominantly used in producing Meekiri, where production has been specialized in various geographic areas in the country, associated with major buffalo farming regions. Physicochemical and microbiological quality attributes are apparent to differ in Meekiri according to varying production regions, processing techniques and storage conditions. The mouthfeel and taste of Meekiri are widely accepted to be thicker and creamier with a pleasant note and is whiter in colour compared to fermented cow milk gel/yoghurt. Since Meekiri production is localized in Sri Lanka and available as traditional know-how at the primary production level, up-to-date comprehensive scientific literature that accounts for processing and detailed product quality characteristics is lacking. Hence, this review evaluates and outlines updated information about the Meekiri production, associated buffalo farming systems, quality characteristics of Meekiri including physicochemical, sensorial and microbiological aspects in the final product.

        Effect of Experience, Education, Record Keeping, Labor and Decision Making on Monthly Milk Yield and Revenue of Dairy Farms Supported by a Private Organization in Central Thailand

        The objective of this research was to assess the effect of experience, education, record keeping, labor, and decision making on monthly milk yield per farm (MYF), monthly milk yield per cow (MYC), monthly milk revenue per farm (MRF), and monthly revenue per cow (MRC) of dairy farms supported by a private organization in Central Thailand. The dataset contained 34,082 monthly milk yield and revenue records collected from January 2004 to December 2008 on 497 farms, and information on individual farmer experience and education, record keeping, and decision making obtained with a questionnaire. Farmer experience categories were i) no experience, ii) one year, iii) two to five years, iv) six to ten years, v) eleven to fifteen years, vi) sixteen to twenty years, and vii) more than twenty years. Farmer education categories were i) no education or primary school, ii) high school, and iii) bachelor or higher degree. Record keeping categories were: i) no records and ii) kept records. Labor categories were: i) family, ii) hired people, and iii) family and hired people. Decision making categories were: i) decisions made by farmers themselves, ii) decisions made with help from government officials, and iii) decisions made with help from organization staff. The mixed linear model contained the fixed effects of year-season, farm location-farm size subclass, experience, education, record keeping, labor, and decision making on sire selection, and the random effects of farm and residual. Results showed that longer experience increased (p<0.05) monthly milk yield (MYF and MYC) and revenue (MRF and MRC). Farms that hired people produced the highest (p<0.05) monthly milk yield (MYF and MYC) and revenue (MRF and MRC), followed by farms that used family, and the lowest values were for farms that used both family and hired people. Better educated farmers produced more MYC and MRC (p<0.05) than lower educated farmers. Farms that kept records had higher MYF and MRF (p<0.05) than those without records. Although differences among farms were non-significant, farms that received help from the organization staff had higher monthly milk yield (MYF and MYC) and revenue (MRF and MRC) than those that decided by themselves or with help from government officials. These findings suggested that dairy farmers needed systematic training and continuous support to improve farm milk production and revenues in a sustainable manner.

        Environmental Conditions and Resource Management in Smallholder Dairy Farms in Thailand. I. Production Systems and Management of Resources

        This study aims to make detail examination of smallholder dairy farming systems in the Nongpho Dairy Cooperative. Forty-three dairy farms were selected from three geographical areas i.e. irrigated area, municipality area, and factory area. Within each area some number of sample farms were selected from each of the three levels of farm and animal crowdedness (very crowded, crowded, and not crowded farms). Detail data were collected during 1996 to 1997, they were socio-economic conditions of the sample farms and farmers, dairy production systems and management of resources (animals, bam, feeds, stocking rates, herd structure, animal body conditions, milk yield and milk quality, manure and farm wastes management, and other related items). Detail information useful for the improvement of farm production efficiency were discussed. It was very clear that much improvement of smallholder dairy production can be achieved if the recommendations given by this study were implemented.

        Costs and Returns in Raising Male Calves from Smallholder Dairy Farms for Beef Production

        The use of the dairy male calf for beef production has been found to be economically unprofitable during the past due to high cost of feeds and relatively low beef price. However, due to current shortage of domestic beef supply and rising beef price, this research aimed to assess feeding methods and costs and returns in raising dairy male calves for beef production under changing economic conditions. Two diets were compared: calves on an optimal feeding level were given milk replacer for 44 d and a concentrate (with ad lib. hay) to 150 kg bodyweight that contained 16% crude protein; those given a sub-optimal diet, more appropriate for smallholder farms, received milk replacer for 30 d and 14% CP concentrate. Twelve pairs of dairy male calves (average age 32 days) of Holstein-Friesian high grades were used, each pair having similar influencing factors such as weight, age, and genotype. Each animal was kept in a separate feeding stall until reaching the final weight of 150 kg. The results from this experiment showed that the differences of traits concerning growth performance and feed efficiency of the animals raised under the two feeding regimes were statistically nonsignificant. The optimal group was just slightly better, but the cost of production of the sub-optimal group was 24 percent lower (4,667 vs. 6,144 baht per animal) and the cost difference was highly significant. The results from this investigation showed that beef production from dairy male calves can be economically viable when sub-optimal feeding method is used and market beef price is at current level.

        낙농경영의 경제분석

        Enterprise, production function and cost function analyses were applied to 128 dairy farm records surveyed by the National Livestock Cooperatives Federation in 1997. Both production efficiency and herd size turned out to be going parallel. And farms with higher production efficiency were lower in fixed input and concentrate per cow than the otherwise. The results of production function analysis suggest that both concentrate and labor are overinvested, roughage is less than properly invested and miscellaneous cost is rationally invested. Optimum herd size of the sample farms appeared 36 heads in cow equivalent which by far exceeds the current cow herd size 16 heads.
