The autoclave method and the traditional cooking method were compared for nutrients (especially. minerals). color difference, viscosity, reduction of sugar and amino nitrogen content of brown stock. The autoclave cooking method is better than the traditional cooking method for retaining protein and amino nitrogen contents, as well as for reducing sugar content. Also, reducing sugar content increased by the autoclave cooking method. Since the color of brown sauce was related with the reducing sugar content, the autoclave cooking method was more effective than the traditional cooking method for the color development of brown stock. Since the autoclave method can reduce the cooking time without a loss of quality in brown stock, the autoclave method is a viable alternative to the traditional method of preparing brown stock.

This study has been conducted to develop brown stock with the high pressure cooking(HPC) method. The sterilization methods, package film and storage methods, and quality maintenance during storage were investigated in this study. The packaging quality of NY/PP was inferior to that of PE/AU/PP since NY/PP facilitated the ventilation and moisture absorption. The maximum duration of the safe storage was found to be 50 days at 25℃, 30 days at 35℃ for NY/PP package film, and 60 days at 25℃, 40 days at 35℃ for PE/AU/PP one. These results showed that the overall quality of brown stock by the HPC method was not different significantly from that of brown stock by the traditional approach. Furthermore, the HPC approach might improve the productivity by saving the labour cost, food cost, and cooking time. Therefore, the traditional method might well be substituted by this newly developed method.

<P>The effects of stocking density on the performance, egg quality, leukocyte concentration, blood biochemistry, corticosterone levels, bone mineral density, and noxious gas emission of laying hens were investigated. Eight hundred 34-week-old Hy-Line Brown laying hens (<I>Gallus gallus domesticus</I>) were randomly assigned to one of 4 treatments, each of which was replicated 4 times. Four stocking densities, including 5, 6, 7, and 10 birds/m<SUP>2</SUP>, were compared. A commercial-type basal diet was formulated to meet or exceed nutrient recommendations for laying hens from the National Research Council. The diet was fed to the hens ad libitum for 8 wk. Results indicated that hen-day egg production, egg mass, and feed intake were less for (<I>P</I> < 0.01) 10 birds/m<SUP>2</SUP> stock density than other stock densities. Production rate of floor and broken eggs and eggshell strength were greater (<I>P</I> < 0.01) for 10 birds/m<SUP>2</SUP> stock density than other stock densities. There were no significant differences in the level of leukocytes among densities. However, heterophils and the H/L ratio were greater (<I>P</I> < 0.01) for 10 birds/m<SUP>2</SUP> than in stock density of 6 or 7 birds/m<SUP>2</SUP>. Serum corticosterone was greater (<I>P</I> < 0.01) 10 birds/m<SUP>2</SUP> than stock density than other stock densities. Litter moisture and gas emission (CO<SUB>2</SUB> and NH<SUB>3</SUB>) were greater (<I>P</I> < 0.01) for 10 birds/m<SUP>2</SUP> than stock density than 6 and 7 birds/m<SUP>2</SUP> stock density. Bone mineral content was not influenced by increasing stock density. However, bone mineral density was less (<I>P</I> < 0.05) for 10 m<SUP>2</SUP> stock density than other stock densities. These results indicate that increasing the density beyond 5 birds/m<SUP>2</SUP> elicits some negative effects on laying performance of Hy-Line brown laying hens.</P>
The Application of Fractional Brownian Motion in Option Pricing

In this text, Fractional Brown Motion theory during random process is applied to research the option pricing problem. Firstly, Fractional Brown Motion theory and actuarial pricing method of option are utilized to derive Black-Scholes formula under Fractional Brown Motion and form corresponding mathematical model to describe option pricing. Secondly, based on BYD stock, estimation model on volatility of this stock is given to analyze and calculate the stock price volatility. Finally, make instance analysis for BYD’s option. Based on market data of BYD’s stock and option, calculate the actual option price and theoretical price of BYD by Black-Scholes formula under Fractional Brown Motion. Compare the forecast price of this stock option given by model with actual price, relatively good effect is obtained, and then conclude that the model has relatively strong applicability.
