Fresh pork belly is a highly popular meat in South Korea, accounting for 59 % of the approximately 100 g of meat per capita that is consumed daily. Fresh pork belly offers not only high-quality protein from the lean cuts but also substantial micronutrients including fat-soluble vitamins and minerals. However, fresh pork belly generally consists of about 30 % fat, with saturated fatty acids representing half of this value. Excessive consumption of saturated fatty acids increases total cholesterol, low-density lipoprotein-cholesterol, and triglycerides while decreasing high-density lipoprotein-cholesterol, raising concerns about an increased risk of hyperlipidemia, followed by cardiovascular diseases. In this review, we discuss the consumption and production trends in South Korea, the general characteristics, and health issues related to fresh pork belly to delineate the features of pork production and consumer welfare.

This study investigated the degree to which instrumental measurements explain the variation in pork loin tenderness as assessed by the sensory evaluation of trained panelists. Warner-Bratzler shear force (WBS) had a significant relationship with the sensory tenderness variables, such as softness, initial tenderness, chewiness, and rate of breakdown. In a regression analysis, WBS could account variations in these sensory variables, though only to a limited proportion of variation. On the other hand, three parameters from texture profile analysis (TPA)-hardness, gumminess, and chewiness-were significantly correlated with all sensory evaluation variables. In particular, from the result of stepwise regression analysis, TPA hardness alone explained over 15% of variation in all sensory evaluation variables, with the exception of perceptible residue. Based on these results, TPA analysis was found to be better than WBS measurement, with the TPA parameter hardness likely to prove particularly useful, in terms of predicting pork loin tenderness as rated by trained panelists. However, sensory evaluation should be conducted to investigate practical pork tenderness perceived by consumer, because both instrumental measurements could explain only a small portion (less than 20%) of the variability in sensory evaluation.

삼겹살은 한국에서 가장 선호되는 돈육 부위로서 일일 평균 식육 섭취량의 약 59%를 차지한다- 삼겹살은 양질의 단백질뿐만 아니라 지용성 비타민 및 다양한 무기질을 공급하는 식품이다. 그러나 삼겹살은 지방함량이 약 30%에 이르며, 이 지방의 대부분은 포화지방산이다 포화지방산의 과다한 섭취는 인체 내 총 콜레스테롤, 저밀도 지질단백질, 그리고 중성지방의 함량을 증가시키며, 고밀도 지질단백질의 함량은 감소시킨다. 이러한 포화지방산의 과다섭취가 지속될 경우 고지혈증의 위험성이 증가하며, 궁극적으로 심혈관계 질환을 일으킬 가능성이 높아진다. 본 논문은 한국에서 선호되는 삼겹살의 소비 및 생산 특성, 그리고 삼겹살의 일반적인 특성을 살펴보고, 이러한 소비특성이 건강에 미칠수 있는 영향에 대해 논의함으로써 소비자의 삶의 질적 향상을 도모하고지 한다.

Purpose: To evaluate the clinical symptoms of patients with dry eyes, based on the ocular surface disease index (OSDI) and analyze the relationship between OSDI and various ocular surface parameters. Methods: This was a retrospective study that included 45 eyes of 45 dry eye patients who visited the Seoul Nune Eye Hospital from August 2017 to December 2017. The patients were assessed by non-invasive keratography for the first break-up time, lipid layer thickness (LLT), tear osmolarity, tear matrix metalloproteinase-9 immunoassay as well as with the conventional Schirmer I test and fluorescein break-up time. The patient’s symptoms were evaluated by the OSDI questionnaires and correlations were analyzed based on the parameters described above. Results: There were significant negative correlations between OSDI and non-invasive keratography for the first break-up time (p = 0.038, r = -0.330), and LLT (p = 0.005, r = -0.426). However, there were no significant correlations between OSDI and fluorescein break-up time, Schirmer I score, and tear osmolarity (p = 0.173, 0.575, and 0.844 respectively). OSDI was not significantly different between matrix metalloproteinase-9 positive and negative groups (p = 0.768). Conclusions: Non-invasive examinations such as non-invasive keratograph break-up time and interferometry of LLT can be efficient tools for evaluating dry eye symptoms.

‘Geumsilchal’ is a Proso millet (Panicum miliaceum L.) variety developed and registered by the Department of Southern Area Crop Science, NICS, RDA, in 2014. This variety was developed through pure line selection from K131247. ‘Geumsilchal’ was an erect type medium-maturing variety. Its growing period was 104 days when it was seeded on May 15, and 94 days when it was seeded on July 15 in Milyang, Korea. The culm length of ‘Geumsilchal’ was about 123 cm, which was 13 cm longer than that of the standard variety ‘Hwanggeumgijang’. ‘Geumsilchal’ was tolerant to lodging in the field because of its wide column width and erect plant type. The panicle type was droopy and its length was about 23 cm. Seed grain and dehusked grains were yellow, and the endosperm characteristic was glutinous. The yield potential of ‘Geumsilchal’ was about 2.41 ton ha⁻¹ in regional yield trials from 2013 to 2014 and was 27% higher than that of the standard variety ‘Hwanggeumgijang’ (Variety registration No. 6247).
