      • 市販 Sausage의 脂防酸 조성에 關한 硏究

        For nutritional and quality evaluation of commerical sausage, 17 kinds were selected by kinds, and manufactures. Total lipid contents were measured and then analyzed the fatty acid composition of those sausages by gas chromatography. The results obtained from this study were as follows. 1) Average total fat contents of Hotdog, Hamberger, Frank, Beef and Pork sausage were 2.98%, 8.85%, 22.71%, 7.70%, 5.27%, respectively. Most of the sausages did not contain much lipid except for Frank sausage. 2) In the case of fatty acid composition it was similer in patterns but different in contents one another. Oleic acid, the chief ingredient of fatty acid, was 34.55%-45.13%, Palmitic acid was 21.39%-33.35%, Stearic acid was 10.41%∼20.54, Linoleic acid and linolenic acid which are essential fatty acid, were, 2.67%. 15.54%, 0.16%, 3.56%, respectively. 3) U/S ratio ranged from 0.75, 1.78. Most of the sausages was over 1.0 in the ratio and P/S ratio, which showed relatively low ratio, ranged from 0.08 to 0.49.

      • 고로슬래그 콘크리트의 特性에 미치는 굵은骨材 配合比의 影響에 관한 實驗的 硏究

        In this study, the experiment was carried out to investigate and analyze the influence of coarse aggregate's mix ratio and Blast Furnace Slag replacements ratio on the properties of concrete. The main experimental variables were water/cement ratio 45 and 65(%), coarse aggregate/fine aggregate ratio 90, 130 and 170(%), Blast Furnace Slag replacements ratio 0, 10, 20(%). According to the test results, the principal conclusions are summarized as follows. 1) The slump and flow of fresh concrete of general tendency case of G/S ratio 90, 130(%) according as Blast Furnace Slag replacements ratio increases together slump(flow) increase, but in the case of plain concrete in G/S ratio 170%, displayed opposite tendency. 2) The compressive strength of hardened concrete were found to be lower in the order of G/S ratio 90, 130, 170(%), also in the order of Blast Furnace Slag replacements ratio 10, 20(%) of concrete are better than the plain concrete.

      • 라켓경기종목 선수의 형태학적 특성

        This study was attempted to describe the morphological characteristics of racket sports player (Tennis, Badminton, Table tennis) and to analyze the similar anthropometic variables and different anthropometic variables among tennis, badminton and table tennis players. In study 150 female and male tennis, badminton and table tennis player completed the measurement of 39 anthropometric variables. These variables analyzed by ANOVA and Overlap Zone (OZ). The results of this study was follows. 1. In male players, tennis and badminton players were similar anthropometic characteristics and tennis and table tennis players was different anthropometic characteristics. Length variables of badminton and table tennis players were relatively similar but breadth variables were different. 2. In female players, tennis and badminton players were different anthropometic characteristics and similar and different anthropometic characteristics among table tennis, tennis and badminton players was not appeared.

      • 플라이애쉬 콘크리트의 特性에 미치는 굵은 骨材 最大値數의 影響에 관한 實驗的 硏究

        In this study, the experiment was carried out to investigate and analyze the influence of coarse aggregate's maximum size and Fly Ash replacements ratio on the properties of concrete. The main experimental variables were water/cement ratio 45 and 65(%), maximum size of coarse aggregate 15, 25 and 40(mm), Fly Ash replacements ratio 0, 10, 20(%). According to the test results, the principal conclusions are summarized as follows. 1) The slump and flow of fresh concrete were found to be higher in the order of maximum size of coarse aggregate 15, 25 and 40(mm), also in the order of Fly Ash replacements ratio 0, 10, 20(%). 2) The compressive strength of hardened concrete were found to be lower in the order of maximum size of coarse aggregate 15, 25 and 40(mm). While, Fly Ash replacements ratio increases in age 7days, showed tendency that compressive strength increases together. but, age 28, 56(day) were showed opposite tendency.

        수유 초기 모유 중 철, 구리, 아연의 함량과 영아의 섭취량 추정

        The objectives of the present study were to measure the content of iron, copper and zinc in human milk and to estimate the intake of iron, copper and zinc of breast-fed infants during the early period of lactation. Twenty-five lactating women who delivered in a hospital in Seoul volunteered for the study. Milk samples were collected at day 2, 3, 4, 5, 6, 7, 15 and 30 postpartum. The contents of iron, copper and zinc were determined using the atomic absorption spectrophotometer after wet digestion. The intakes of iron, copper and zinc of infants were estimated by multiplization with the infant milk intake reported in our laboratory. The content of iron was 0.58 ㎍/g in colostrum, 0.48 ㎍/g in transitional milk and 0.39 ㎍/g in mature milk while the estimated iron intake of infants was 271, 255 and 259 ㎍/g day, respectively. The content of copper in the milk was 0.45 ㎍/g in colostrum, 0.43 ㎍/g in transitional milk and 0.33 ㎍/g in mature milk while the estimated copper intake of infants was 210, 229 and 220 ㎍/day, respectively. The content of zinc in the milk was 5.24 ㎍/g in colostrum, 3.70 ㎍/g in transitional milk, 2.93 ㎍/g in mature milk while the estimated zinc intake of infants was 2452, 1968, and 1949 ㎍/day, respectively. These results suggest that copper and zinc intake of infants are met to RDA but iron is not.

      • 시판 스낵식품의 아미노산 조성 및 우유, 계란과 사과의 동시 섭취시 보족효과

        This study was carried out to evaluate the nutritional adequacy of breakfast cereal products sold in market. Breakfast cereal products of several manufacturing companies were obtained and analyzed in their amino acid composition. Futhermore, the effect of supplementation was evaluated when cereals were combined simultanously with milk, an apple and an egg. It was shown that Glu was the highest amino acid content in all the cereal products. Pro was the second highest in corn and barley products, while Arg was in the rice, oat and in wheat germ products. Third one was Leu or Asp, depending on the products. Ratio of total essential amino acid ranged from 26.3% to 33.7%. Wheat germ products showed the highest score of 33.7%. In the snack product whose main constiuent was corn, loss of amino acid in puffed type of cereal was higher than that of flaked type. The amino scores of all the cereal products ranged from 11.0 to 48.0. Among all the snacks, rice product had the highest score value of 48.0. The first limiting amino acid of breakfast cereal products was sulfur containing amino acid or Lys. Though the protein quality of breakfast cereal products was poor, supplementation of 120ml milk, one egg, and one apple with the snacks provide a good quality of protein because of their various amino acid content. Hence it would be highly desirable to combine breakfast cereal products with milk, an egg and an apple.

      • 人蔘正果가 Rat의 成長과 體成分에 미치는 影響

        This study was carried out to investigate the effect of Honeyed ginseng(H.G.) on growth and biochemical components of rats. Grouping of rats in experiment was four different dietary groups as 0% H.G. group(control group), 1% H.G. group. 5% H.G. group and 10% H.G. group in continous ad libitum feeding for 3 weeks, repectively. Body weight gain of 1% H.G. group was more increased in comparison to control group. 5% and 10% H.G. groups. Liver weight of 1% H.G. group was more increased in comparison to others. But, spleen weight of 10% H.G. group was significantly decreased in comparison to control and 1% H.G. group(P<0.005). In biochemical component of plasma, total protein of 1% H.G. group was more increased in comparison to others. β-lipoprotein in plasma was significantly decreased in 1% and 5% H.G. group(P<0.05) and HDL-cholesterol was more increased in all H.G. groups. however, 5% H.G. group was significantly increased (P<0.05). Liver lipid of 10% H.G. group was more decreased in comparison to other groups. From the above result it was concluded that group treated with H.G. showed good nutritional efficiency in the body, especially, decreased a β-lipoprotein but increased HDL-cholesterol in plasma. 1% and 5% H.G. content of diet was superior to that of 10% in nutritional efficiency.

      • 개고기의 脂肪酸 組成에 關한 硏究(Ⅰ)

        In summer, some Korean people like to have "Bo Sin Tang" as their favorite food. It seems to be realized that the Canis meat, which is thought their constituents of amino acids and fatty acids very pecular than those of other animal meats, would enhance their health. Since there has not been any study of their nutritional aspects other than the general component in this country yet. in order to determine the value of nutrition of Canis meat, the meat from native. kinds of Korean dog had been analyzed in terms of the general component and fatty acid composition. The following results are obtained; 1. In the meats from native kinds of Korean dog, the amount of fats 6.6 percent in ham portion, 12.4 percent in bacon portion. and the average of the two is 9.5 percent. 2. The saponification value of the fat is 194~202 and iodine value 70.4∼75.2. 3. The constituent of fatty acid is 37.4 percent in oleic acid which is highest in the fatty acid constituents and show similiar pattern to those in other kinds of meats. 4. The ratio of saturated fatty acid to unsaturated of the fat is 1.62 and that of saturated fatty acid to polyunsaturated 0.39. 5. The total amount of cholesterol in the specimen is 62.5mg% and the ratio of free to ester form 24.2%.

      • 운동선수의 체중감량 및 운동수행에 따른 혈장 지단백 변화

        The purpose of this study was to investigate the relation of exercise and plasma lipoproteins which have the important functions for metabolism and transport of plasma lipids. The subjects of study were twenty male athletes in Korean National College of Physical Education. Their nutrient intakes were surveyed by weighing method, and plasma lipoproteins were determined by eletrophoretic method during the body weight reduction and exercise. And A group was loaded 70-80%, and B group loaded over 85% in maxiam oxygen consumption. The results obtained were as follows ; 1. According to the dietary analysis, in A group, the average intake of energy was 1915.5kcal per day of one man. in B group, was 1922.2kcal. Rates of energy composition were 60.7% in carbohydrate, 16.7% in protein and 22.6% in fats in A group and 61.5% 15.9%, 22.6% respectively, in B group. 2. Before and after body weight reduction, β-lipoproteins(LDL+VLDL) content in plasma of A group and B group were more decreased. And α-lipoprotins(HDL) content in plasma of A group and B group were more increased. 3. In "3rd step", β-lipoproteins content in plasma of A group were more increased in comparison to B group. In "4th step", β-lipoprotein content in plasma of B group were more increased in comparison to A group. 4. After exercise, progressive changes of plasma lipoproteins in each groups, α-lipoprotein content in plasma of A group and B group were more decreased gradually.
