Optimization of Processing Conditions and Evaluation of Shelf-life for Jeonbokjang Products

The objectives of this study were to identify appropriate manufacturing conditions and determine the shelf-life of cold-stored jeonbokjang, and to study the functional properties of oriental herbal jeonbokjang. Blanching abalone at 100oC for 1 min produced the highest sensory scores, and the optimum formulation of jeonbokjang sauce was 49.56% water and 18.62% starch syrup along with other fixed ingredients. During the storage time of 4weeks at 5^oC, the texture of jeonbokjang became firmer,and salinity, total acidity, and L value decreased, whereas pH, volatile basic nitrogen (VBN), and the number of microorganisms increased. The storage experiment indicated that the shelf-life of cold-stored jeonbokjang was 3 weeks at 5^oC. Another optimum formulation for oriental herbal jeonbokjang was identified using optimizing technique;50% water, 12.5% starch syrup, and 8.33% oriental herbs. Oriental herbal jeonbokjang (100 g) had 122.44 mg vitamin C equivalent (VCE) of antioxidant capacity and 140.89 mg garlic acid equivalent (GAE) of total phenolics.
원도심 활성화를 위한 도시재생활성화지역 관광숙박시설 개선방안 -지역전문가와 국·내외공무원대상 SWOT-AHP분석을 중심으로-

The purpose of this study is to suggest ways to improve tourist accommodation facilities in the urban regeneration area for revitalizing the Old CBD(Commercial Business District). The methodology of this study is SWOT-AHP analysis based on the result of Focused Group Interview(F.G.I.) that national and international experts participated in to analyze the status and problems of tourist accommodation facilities in terms of sustainable integrated urban regeneration. As a result, the national expert group analyzed that WO strategy should be considered as an improvement strategy for tourist accommodation and ST strategy should be considered as a priority for international expert group. For WO strategy, it is necessary to establish a web-based integrated information system, such as operation information of each facility and promoting tourism events nearby, establishing an exchange program between guests, and mandating community space in the facilities. The ST strategy should be supported by the establishment of an available housing DB, a system for participation of residents' organizations, a certification evaluation system for facilities and a safety management guide. In addition, it has been strategically derived to find out the subject through the resident organization and to link it with the urban regeneration project. The WO strategy is considered to be applicable to the traditional Korean experience business and the ST strategy for city home-stay services for foreign tourists. 도심관광을 통한 쇠퇴지역 재생은 다양한 볼거리를 제공하기 위해 문화·예술관련 시설 확충, 축제·이벤트, 전시 및 관람 프로그램이 추진되고 있으나, 관광소비를 견인하고 그 지역의 고유한 문화와 정취를 직접 체험할 수 있는 관광숙박시설에 대한 확충 및 개선방안이 미진한 상황이다. 이에 본 연구는 원도심을 활성화를 위한 도시재생활성화지역 내 주거지역의 관광숙박시설의 개선방안을 모색하는 것을 목적으로 한다. 본 연구에서는 광주광역시 도시재생선도지역의 관광숙박시설(한옥체험업, 외국인관광 도시민박업)의 개선방안을 지역전문가와 국·내외 전문가를 대상으로 SWOT-AHP분석을 통해 시사점을 도출하였다. 분석결과, 국내전문가 그룹에서는 WO전략이, 국외 전문가 그룹에서는 ST전략이 도출되었다. WO전략으로는 시설 간 운영정보와 주변 관광상품 홍보 등 웹기반 통합정보제공시스템구축, 게스트 간 교류프로그램 마련, 조성 시 커뮤니티공간 의무화 등이 필요하다. ST전략으로는 활용가능 주택 DB구축, 주민조직의 참여를 위한 제도마련, 시설에 대한 인증평가제 및 안전관리 가이드 등의 뒷받침이 마련되어야 한다. 이외에도 주민조직을 통한 운영주체 발굴, 도시재생사업과의 연계 등이 전략으로 도출되었다.
