An antioxidant activity of Gardenia Fruit (Gardenia jasminoides Ellis) which has been used for food coloring was studied. The antioxidant activity was determined by measuring lipid peroxide produced when a mouse liver homogenate was exposed to the air at $37^{\circ}C$, using 2-thiobarbituric acid (TBA). Both water and methanol extracts of Gardenia Fruit showed the antioxidant activity. On solvent fractionation, the antioxidant activity was removed into the ethyl acetate and butanol soluble fractions. And the final water soluble fraction also showed the antioxidant activity in the low concentration, but it promoted the lipid peroxidation in the high concentration. Two compounds (I and II) having the antioxidant activity were isolated from the butanol fraction, and compound I also occurred in the ethyl acetate fraction. The antioxidant activity of compound II was more potent than that of I. By analyzing data for UV, IR and $^1H-NMR$, compounds I and II were identified as geniposide and crocin, respectively.

For the purpose of evaluating protective components against alcohol-induced toxicity, the active components enhancing alcohol metabolism was pursued from water soluble fraction by ethanol precipitation and DEAE-cellulose chromatographic technique. As a result, various high molecular weight fractions from Aloe vera and Aloe arborescens, on a single oral administration in rats were found to cause a significant decrease in the blood ethanol concentration as well as enhancement of liver cytosolic ADH and ALDH activities and among which, a strong acidic high molecular weight fraction was demonstrated to exhibit the most potent enhancing activity on ethanol metabolism.

혈장 칼리크라인의 작용에 의해 소혈장 고분자 키니노겐으로부터 bradykinin과 함께 유리되는 Histidine Rich Peptide(HRP)는 혈용응고제 XII 인자의 표면활성화를 강력히 저해하는 작용이 있는 것으로 알려져 있다. HRP를 혈액응고 저해제로서 개발하기 위하여 HRP가 강염기성인 성질을 이용한 간편한 청량법을 개발하였다. HRP는 0.1M 구연산 완충액, pH 4.2에서 bromocresol green (BCG) 와 반응하여 난용성의 침전을 생성하며 반응 혼합액 중의 BCG 양을 감소시겼다. BCG의 감소는 10~120 nmole의 HRP에 대하여 직선적이었다. 또한 BCG와 HRP의 결합 몰비는 약 20이었다. The addition of HRP to a BCG solution in a 0.1M citrate buffer, pH 4.2 results in a decrease of dye level by a precipitation of dye level by a precipitation of dye-HRP complex. The reduced dye is linear for HRP up to 120 nmoles. Mole ratio of dye-HRP complex is approximately twenty.

This study was conducted to further characterize mucilages from Dios coreae Rhizoma, which have been known to be proteoglycans. We chose the two types of yams, Dioscorea batatas Dec. (club-like) and D. japonica Thunb. (cane-like). Repeated gel filtration of a dialyzed water extract of each fresh yam on Bio-gel P-100 and then Sephadex G-150 columns completely separated the mucilage from protein. Furthermore, gel filtration of a water extract from each yam processed by steaming and drying on the Bio-gel P-100 column gave only one polysaccharide peak without protein. These results revealed that the mucilages of yams were only composed of polysaccharide. Then we assessed some properties of the mucilages under three kinds of criteria: a complex-forming capacity between mucilage and alcian blue, mannose content in the mucilage, and viscosity. The complex-forming capacities of two types of fresh yams were closely similar with each other, but the processing of two types of the fresh yams greatly lowered the complex-forming capacity and viscosity.

The antioxidant activities of the root of Panax ginseng and the root bark of Acanthopanax senticosus were compared by in vitro and in vivo experiments. The results of in vitro experiments showed no significant difference between the antioxidant activities of both crude drugs. However, the results of in vivo experiments showed much higher antioxidant activities in Panax ginseng than Acanthopanax senticosus, showing about 80 times greater activity.

Contents of nucleic acid metabolites, such as uracil, uridine and hypoxanthine in the unossified pilose antler of Cervus nippon Temminck var. mantchuricus Swinhoe and the frozen and dried meat of Theragra chalcogramma (Thallas) were determined by high-performance liquid chromatography. The amount of hypoxanthine in the water extract of the meat (39.2 ㎎ %) was higher than that of the antler (24.6 ㎎ % ).
