맥주보리의 저장장소 및 기간에 따른 원맥과 맥아의 품질 특성 분석

This study was carried out evaluate to grain and malting quality of 2 row barley harvested from Jeju during the storage period. The harvested barley samples were stored up to 30 days in farm house and then Nonghyup storage house from 30 to 120 days. The protein content was high 14.4% in farm storage and decreased by 11.1% during Nonghyup storage period. Among the malting quality characteristics, malt yield and protein were significantly reduced, however malt acrospires length was increased during storage period. In addition, grain and malting quality of five were evaluated during storage period up to 30 days. Grain quality characteristics such as 1,000 kernel weight, husk ration, protein were significantly different among the malting barley cultivars while malting qualities such as filtration time, wort color, and sugar content did not affect on storage period. Therefore, the results showed that the storage condition and period of grain did not significantly affect the grain and malting quality.
