치자 추출물이 돈육 패티의 아질산염 잔류량과 저장성에 미치는 영향

예로부터 옷감의 염료 및 식용색소로 사용되어 온 치자는 혈당 저하, 항 종양, 항 혈전, 혈관신생 억제, 항산화, 항균 등 다양한 생리활성이 있는 것으로 보고되고 있으나 치자의 아질산염 소거 작용이나 육제품에의 이용에 관한 연구는 미비하다. 본 연구에서는 치자의 아질산염 대체 효과와 항균활성 등 기능성을 살펴보아 치자의 다양한 생리 기능성이 부여된 건강 지향적 육제품 개발의 기초자료로 활용하고자 아질산염(50, 100, 150 ppm)과 치자 추출물(0, 0.25, 0.5%)의 첨가량에 따른 돈육 패티의 물리 화학적 품질특성을 평가하고 아질산염 잔류량과 저장성을 살펴보았다. 패티의 색도를 측정한 결과 치자 추출물의 첨가에 따라 명도(CIE $L^*$)와 적색도(CIE $a^*$)가 감소되는 반면 황색도(CIE $b^*$)가 증가하였다. 돈육 패티를 가열한 결과 치자추출물이 첨가되지 않은 control 군에서는 아질산 첨가량이 많을수록 가열감량이 작았으나, 치자 추출물 첨가에 의한 가열감량의 변화는 명확히 관찰되지 않았다. $4^{\circ}C$에서 6주간 저장 후 패티의 pH, TBARS 및 VBN을 살펴본 결과 치자 추출물 첨가량이 많을수록 pH가 낮은 경향이었으나, TBARS와 VBN은 변화가 없었다. 돈육 패티의 아질산염 잔류량은 저장기간이 길어짐에 따라 점차 감소하였으며, 치자 추출물 첨가량이 많을수록 잔류량이 낮았다. 저장 중 미생물 오염을 살펴본 결과 대장균은 검출되지 않았으며, 일반세균은 치자 추출물 첨가에 따라 감소하여 항균 작용을 위한 아질산염 사용의 대체효과를 보였다. 이상의 결과를 보면 돈육 패티 제조 시 치자 추출물의 첨가는 아질산염 잔류량을 감소시킴과 함께 저장시 항균성을 증가시켜 건강 향상 기능성 천연 소재로서 치자의 이용 가능성을 시사한다. Gardenia fructus has been reported to have bioactivities of lowering blood glucose, antitumor, antithrombosis, repression of neogenesis of blood vessels, antioxidant and antibiosis. However, the nitrite scavenging activity and utilization in meat products have not been studied. The substitution effect for nitrite and antibiosis of Gardenia fructus extract (GFE) were investigated by measuring the residual nitrite contents and storage properties of pork patties prepared with nitrite (50, 100, and 150 ppm) and GFE (0, 0.25, 0.5%). The CIE $L^*$ and CIE $a^*$ of pork patties decreased, while CIE $b^*$ increased as the addition of GFE increased. Patties with more GFE added tended to be lower in pH when stored at $4^{\circ}C$ for 6 wk, but TBARS and VBN were not affected by the addition of GFE. Residual nitrite in patties was lowered as the storage period was lengthened and as the GFE addition was increased. During the storage at $4^{\circ}C$, Escherichia coli was not detected, and the total aerobic bacterial count was decreased as more GFE was added, showing the substitution effect of GFE for nitrite in antimicrobial activity. In conclusion, the results show that GFE has nitrite scavenging and antibiotic activities in meat products, suggesting its potential use in healthy and sustainable foods with diverse biofunctionalities.

미역, 파래, 톳 등 해조류의 우수한 기능성을 육제품에 활용하기 위한 기초 자료를 얻기 위하여 이들의 첨가(1, 2, 4%)가 돈육 패티의 물리 화학적 특성과 저장성 및 관능에 미치는 영향을 살펴보았다. 파래, 미역, 톳 등 모든 해조분말 첨가 패티에서 해조 첨가량이 많을수록 조회분함량이 증가하고, 패티의 CIE $L^*$, $a^*$ 및 $b^*$ 값이 감소하였다. 패티를 중심온도 $72^{\circ}C$에서 15분간 가열하였을 때 가열 감량을 측정한 결과 해조 분말 첨가량이 증가할수록 돈육 패티의 가열감량이 감소하는 결과를 보였으며, 특히 미역 첨가가 가장 큰 폭의 가열감량 감소를 보였다. VBN 값은 파래, 미역, 톳 등 모든 해조류 첨가군이 대조구 패티에 비해 낮았다. 해조류 분말 첨가는 패티의 다즙성을 증가시켰으며, 향미와 종합기호도에는 큰 영향을 미치지 않았다. 이상의 결과로 보아 돈육 패티 제조 시 해조류의 첨가는 패티의 회분함량을 증가시켜 돈육에 부족한 무기질 함량을 보충해주며, 패티의 가열감량 감소, 다즙성 증가 및 VBN 감소 등 긍적적 효과가 기대된다. Physicochemical properties and palatability of pork patties prepared with 3 levels (1%, 2%, and 4%) of seaweeds, sea mustard, green laver, and seaweed fusiform were studied. The addition of seaweed powders to pork patties increased crude ash content of the patties. When the patties were heated at an internal temperature of $72^{\circ}C$ for 15 min, cooking loss was decreased as the amount of seaweed increased. Also, the addition of sea mustard showed the lowest cooking loss. Volatile basic nitrogen (VBN) of patties stored at $4^{\circ}C$ was lower in patties containing seaweed than in the control patties. Juiciness of the cooked patties was increased in patties with seaweeds, while springiness was decreased. The addition of seaweed did not affect flavor preference and overall acceptance scores in spite of sensing seaweed flavor. In summary, the addition of seaweed in preparation of pork patties is expected to have positive effects in supplementing minerals, a reduction in cooking loss, a decrease in VBN, and an increase in juiciness.

This study aimed to understand these channels that one-man salons would use for retraining or reeducation, areas which the salons would pay the greatest attention to as well as improvements that should be made as priorities. In order to achieve the research goal, the study conducted a survey targeting one-man salons in Korea and divided the retraining areas into technical training, hair science theory education and other training fields which the salons would have the highest interest in. The study then used a statistical package program SPSS 21.0 to carry out a frequency analysis. The findings of the analysis reported that as for the technical training, the one-man salons get help from academies or personal seminars but, the majority of the research participants answered that training costs are expensive. In terms of the hair science theory education, the study confirmed that most of the one-man salons visit colleges, graduate schools and personal seminars for the education. 69.3% of the research participants were satisfied with the education but as for the rest of the participants, they ended up not being satisfied because they failed to keep up with classes. When it comes to the fields with the one-man salons’ greatest desire for education, the study came up with hair science, chemical theory and heat perm. As far as this study understood from the results, the one-man salons are very much determined to learn both of heat perm through these charged classes but not through free-of-charge ones in professional educational institutes and personal seminars, which would help the salons to get high added value, and this difficult hair science theory that would lead the salons to ways to repair hair that has been damaged by frequent chemical treatments and other various causes which was hardly observed in the past. Regarding the improvements to be made, the research participants were the least pleased with the expensive training costs which was followed by the unsatisfactory training contents as well as how the participants cannot catch up with the classes only quickly. In the light of that, as an idea to solve such complaints, this study suggests that other follow-up researches should discuss if there are systems that the one-man salons can use as support from governments, Korea Beauty Industry Society and others. In addition, the study hopes that what it had offered as the research findings are used by retraining institutes as basic references that would contribute the institutes to how they design programs in consideration of characteristics of the one-man salons and, that will in the end encourage the one-man salons to eventually secure their positions as professional salons.

This study is to analyze factors affecting on job satisfaction of spa therapist as it is thought that job characteristics of therapists working in a spa, a professional service business based on human resources have a good deal of professional aspects requiring techniques and knowledge and there might be differences regarding the factors affecting job satisfaction from those of other service workers. Data collection was done in the way of survey with self-recording and individual interviews in the period from Oct. 10th, 2007 to Oct. 31st, 2007, and 350 questionnaires in total were distributed for therapists in hotel-spa, resort-spa and day-spa. And finally, 255 questionnaires were collected and 240 ones except 15 ones with unfaithful answers were analyzed using SPSS 12.0 statistic package program, going through the process of data cleaning process. 1. The factors affecting job satisfaction are four things; `educational training`, `relation with seniors`, `income system`, and `relation with coworkers` and job satisfaction was identified as a single composition concept. 2. All the four affecting factors on job satisfaction turned out influencing job satisfaction, and the factor, `educational training`(0.488) had the highest effect followed by `relation with seniors`(0.439), `income system`(0.295) and `relation with coworkers`(0.229) in order. 3. Regarding the result of factor measuring variables of `educational training` and regression analysis of job satisfaction, spa development possibility(0.359) showed the highest influential one on job satisfaction, followed by educational program(0.248), and chances of self-development(0.193) in order. The study has the meaning as an exploring study having done a sample survey for the national therapists as a population, and also has an academic meaning in that the factors of educational training have the biggest effect on job satisfaction; spa development possibility in spa industries, educational programs, chances of self-development, etc. Through this study, it is considered that if job satisfaction of spa therapists is high, it will have a positive effect on spa management, so just offering vision of spa center and sharing it for effective operation can increase job satisfaction of therapists. Therefore, it was offered as follows; first, proposing vision of spa center to therapists, second, strengthening internal marketing, and third, job defining of therapists & suggesting manual necessity.
