The objective of this study was to investigate the preference and consumption behavior for inland water fishes. By setting demand models for preference, impediments of consumption, influential relations with other food groups, and stated preference of inland water fishes, the determinants of inland water fish consumption were analyzed. Data was collected through sample surveys of 3,081 households. Consumers` most preferred type of inland water fish was the eel, which 20.8% of the respondents chose. Following closely behind was the mudfish, which 19.0% of those surveyed selected. It can be said that inland water fishes show stronger substitutable and supplementary relationships compared to that of other food groups. The more the consumer prefers land animal protein such as meats, dairies, and eggs, the more the consumer tends to avoid consuming inland water fishes. On the other hand, consumers that preferred water products, albeit different in type, such as salt water fishes or seaweed also tended to show preference for inland water fishes. According to influential relations, it appeared that fried foods and alcoholic liquors also go well with inland water fishes. In a demographic point of view, demand for inland water fishes tended to be high among married men in the elder age groups. In a geographic viewpoint, those that showed high demand for inland water fishes tended to live in small and medium-sized cities. The main consumers of inland water fishes can be summed up as those that value this food group for its health benefits or enjoy its taste and flavor as appetizers with alcoholic drinks.
