This study was done about the effect of chitosan treatment on growth and shelf life of soybean sprouts. Growth rate of control was 16.59cm after 5 day cultivation, those of 5.0%, 1.0% of chitosan and 1.0%, 0.5%, 0.1% of oligochitosan added were 18.54cm, 18.63cm, 18.10cm, 17.66cm and 17.45cm, respectively. During 3 weeks storage, shelf life was determined on the basis of oligochitosan added were 28.52㎎%, 22.42㎎%, 20.02㎎%, 25.17㎎%, and 31.88㎎%, respectively. But control was 40.02mg%. Moreover, pHs were appeared to be 8.09, 8.04, 7.62, 8.06, and 8.11 while that of control was 8.14 Contents of total amino acids of soybean sprouts after cultivation for 5 day were 718.66㎎/g, 198.10㎎/g, 169.47㎎/g, 173.12㎎/g, and 156.61㎎/g, respectively. But control was 157.17㎎/g.
