        전자선 조사가 발아현미 분말의 품질에 미치는 영향

        This study was conducted to evaluate effects on reduction of harmful microorganismscontaminated and changes of γ-aminobutyric acid (GABA) and β-sitosterol in germinated brownrice flour by electron beam (EB) irradiation. Germinated brown rice sprouts with 2 mm lengthwere separated, dried and ground for manufacturing flour. The flour was divided to 6 portionsand EB-irradiated within the absorbed dose of 1, 2, 3, 4 or 5 kGy. Non-irradiated one was used ascontrol. EB irradiation could reduce the numbers of Escherichia coli O157 : H7, Salmonella typhimurium,Listeria monocytogenes, Staphylococus aureus and Bacillus cereus. Data from D10 valuesof microflora also indicated that EB irradiation of 5 kGy could reduce the number of the harmfulmicroorganisms. GABA was not affected by EB irradiation, but β-sitosterol was affected and thecontent decreased. The results appeared that EB irradiation can apply to eliminate the harmfulmicroorganisms contaminated in germinated brown rice sprout for use to processed foods as rawmaterial.

        발아귀리 분말을 이용한 뇌 신경세포 HT22의 보호 효과를 갖는 덮밥용 소스 페이스트의 개발

        This study aimed to develop a sauce paste (SP) with functional properties to improve brain health. Sprouted oat powder (SOP) was used as a substitute for wheat medium flour (WMF). SP was developed from 1% turmeric root powder, 75% tomato paste, and several concentrations of SOP, namely, 5% (T1), 10% (T2), and 15% (T3). The control (T0) contained 5% WMF instead of SOP. The L values of the samples decreased, and the a and b values increased in a dose-dependent manner similar to the viscosity and organoleptic properties. The samples displayed grass taste and smell in a dose-dependent manner. These results indicate that seasonings should be used to mask the adverse flavor or to improve the flavor to make the SP appropriate for use as food topping. An extract of SP T2 (15% SOP) was used to test the protective effects of SP in brain neurons, HT22 cells. T2 extract showed anti-inflammatory effect on Raw 264.7 macrophages, and inhibitory effect in HT22 cell death resulting from by oxidative stress. These results indicate that SOP could be used to prepare SP for toppings as a thickening agent, replacing WMF.

        자아해석 방식이 우울 및 심리적 안녕감에 미치는 영향 - 정서표현 갈등의 매개효과를 중심으로-

        The Relationship between Self-Construal and Depression, Psychological Well-Being: The Mediating Effect of Ambivalence over Emotional ExpressionYang, Mung-sunHa, Jung-Hee攀 Chungbuk National University攀攀This study was to identify the relations among independent self-construal, relational interdependent self-construal, and ambivalence over emotional expression, depression, psychological well-being on undergraduate. It was further to identify ambivalence over emotional expression as mediator of the relationship between independent self-construal, relational interdependent self-construal, depression, psychological well-being. Three-hundred undergraduate university students participated in this study. The results of the study are as follows: First, independent self-construal was positively correlated with psychological well-being, and it was negatively correlated with ambivalence over emotional expression, depression, and relational interdependent self-construal was positively correlated with ambivalence over emotional expression, psychological well-being, and it was non significant with depression. Secondly, level of self-construal difference was significant on depression, ambivalence over emotional, psychological well-being. Thirdly, ambivalence over emotional mediated relations between independent self-construal and depression, psychological well-being. ambivalence over emotional mediated relations between interdependent self-construal and psychological well-being.The results of this study were discussed and limits of the present study and suggestions for further research were noted. 이 연구에서는 대학생을 대상으로 하여 독립적 자아해석, 관계적-상호의존적 자아해석, 정서표현 갈등, 우울감, 심리적 안녕감의 관계를 살펴보고, 정서표현 갈등이 독립적 자아해석 및 관계적 자아해석과 우울 및 심리적 안녕감과의 관계에서 매개역할을 하는지 살펴보았다. 대학생 300명을 대상으로 연구를 실시한 결과 첫째, 독립적 자아해석은 심리적 안녕감과 통계적으로 유의한 정적 상관을 보였고 표현갈등, 우울과는 통계적으로 유의한 부적 상관을 나타내었다. 이에 비해 관계적 자아해석은 표현갈등, 심리적 안녕감과는 통계적으로 유의한 정적 상관을 보였고 우울감과는 통계적으로 유의한 상관을 나타내지 않았다 둘째, 독립적 자아해석과 관계적 자아해석의 수준에 따라 우울, 정서표현 갈등, 심리적 안녕감에서 유의한 차이를 나타내었다. 셋째, 정서표현 갈등이 독립적 자아해석과 우울 및 심리적 안녕감과의 관계에서 매개역할을 하였고, 관계적 자아해석과 심리적 안녕감과의 관계에서 또한 매개역할을 하였음을 확인하였다. 이러한 결과에 대한 논의와 함께 시사점, 한계점을 제시하였다.

      • 비열 이온화 에너지 처리가 전분호화용액의 이화학적 특성에 미치는 영향

        This study was conducted to evaluate the effects gamma irradiation on physicochemical and nutritional properties of gelatinized starch solutions to select cereal for patient fluid food. Gelatinized cereal solutions were prepared with wheat (GWS), rice (GRS), waxy rice (GWRS), and waxy maize (GWMS) by heating at 100℃ and subjected to gamma-irradiation at doses of 10, 20, and 30 kGy. GWRS and GWMS showed significantly higher viscosities than GRS and GWS. The viscosities of cereal solutions were decreased as irradiation dose increased, and the reduction of viscosity by irradiation was highest in GWRS showing more than 99% reduction with 20 or 30 kGy irradiation. Contrary to viscosity, blue values of GWS and GRS were higher than those of GWMS and GWRS. In FT-IR spectrum, the bands of water absorption and O-H stretching were decreased as irradiation dose increased. Blue values of the gelatinized cereal solutions were decreased by irradiation, but no differences were observed among irradiation doses. Gamma irradiation increased the content of slowly digestible starch (SDS) of GWRS, while reducing rapidly digestible starch (RDS) of GWRS, yet it did not affect in vitro starch digestibility of GRS, GWS, and GWMS. These results of this chapter may provide basic information on the changes in physicochemical and nutritional properties of gelatinized cereal solutions by gamma irradiation.

        Sik-Hye is a korean traditional soft drink made of hard steamed rice, rice or glutinous rice, fermented with barley sprouts oil. It is produced by adding water and sugar during the process of fermentation. Because it is widely known to the public, many giant corporations sell it in the OEM system which is linked with small companies. This report will analyze the technical and hygienical problems and on improving its quality. Moreover, it will focus on increasing economical efficiency of an enzyme. It is expected that this report will give a basic idea on developing this boundless industry and will contribute to the growth of other related korean traditional soft drinks in the industry as well.

        Protein kinase A mediates microglial activation induced by plasminogen and gangliosides

        In the injured brain, microglia is known to be activated and produce proinflamatory media-tors such as interleukin-1β (IL-1β), tumor necro-sis factor-α (TNF-α) and inducible nitric oxide protein kinase A (PKA) in microglial activation by both plasminogen and gangliosides in rat primary microglia and in the BV2 imortalized murine microglial cell line. Both plasminogen and gangliosides induced IL-1β, TNF-α and iNOS mRNA expression, and that this expression was inhibited by the addition of the PKA inhibitors, KT5720 and H89. Both plasminogen and gan-gliosides activated PKA and increased the DNA binding activity of the cAMP response element- binding protein (CREB). Furthermore, KT5720 CREB and NF-κB in plasminogen-treated cells. These results sugest that PKA plays an im-portant role in plasminogen and gangliosides- induced microglial activation.
