Soy isoflavones are reported to help women reduce post-menopausal symptoms, and be effective in preventing cancer, cardiovascular diseases, osteoporosis. Consumption of soy-based foods has been increasing since FDA in 1999 approved a health claim saying consumption of soy protein may reduce the risk of heart disease, and it has been recommended to take isoflavones with soy foods as is, if possible. The sales of isoflavone concentrates from soybean, especially for dietary supplements, has been increasing, too. Maket volume of isoflavone concentrates is the biggest, about $40 million in 2000, in Europe, followed by $30-40 million in US in 2002. It is about $10-20 million in Japan in 2002. Various forms of dietary supplement with isoflavones are shown in stores, many of them are calcium-supplentary products for reducing the risk of osteoporosis in mid-aged women. Soybean hypocotyl is a good starting material to isolate and concentrate isoflavones, for these are composed of as much as 2% of the weight of hypocotyl. Isoflavones could be prepared from hypocotyl through steps as extraction, removing proteins, ultrafiltration, adsorption, drying, yielding 40-50%. Furthermore, the isoflavones could be converted to aglycon forms to enhance their efficacies. The usage of isoflavones in the dieatry supplement market should be increasing. because researches on using isoflavones, as a natural altarnative material of hormone replacement therapy to treat post-menopausal symptoms, are active.
