흰콩 가루를 첨가한 마카롱의 품질 특성 및 항산화성

본 연구는 아몬드 가루를 주재료로 하는 마카롱에 기능성 소재인 흰콩 가루를 0, 25, 50, 75, 100% 비율로 대체첨가하여 흰콩 마카롱을 제조하였다. 마카롱 내부의 수분 함량은 흰콩 100% 첨가군에서 가장 높아 흰콩을 첨가할수록 촉촉한 것으로 사료되며, 부피는 흰콩 100% 첨가군에서 가장 작았던 반면, 무게는 가장 많았다. 퍼짐성은 흰콩 50% 첨가군에서 가장 커 외관상 좋은 것으로 생각된다. 당도 및 환원당은 흰콩 100% 첨가군에서 가장 높았는데 흰콩에 올리고당 함량이 높아 대체 감미료로서 기능할 수 있고, 혈당 강화에도 도움을 줄 것으로 생각된다. pH 및 산도는 흰콩 50% 첨가군에서 중성을 띠어 기포 안정성이 가장 클것으로 생각된다. 색도 중 L값은 환원당이 풍부한 흰콩으로 인해 갈색화가 발생하여 점차 어두워지며 볶은 콩가루의 높은 a값으로 인해 a값은 점차 증가하고, b값도 증가하는 경향이다. 기계적 조직감 중 경도는 수분함량과 반비례하여 흰콩을 첨가할수록 작아져 부드러울 것으로 생각된다. 검성과 씹힘성 또한 흰콩을 첨가할수록 작아진다. 항산화 물질인 플라보노이드와 총 페놀성 화합물 함량은 흰콩 100% 첨가군에서 가장 높았으며, 항산화 활성의 측정에 사용되는 DPPH 라디칼 소거능 및 SOD 유사활성 또한 흰콩 100% 첨가군에서 가장 높았다. 전반적인 수용도는 흰콩 50% 첨가군에서 가장 높았는데, 색의 진하기, 고소한 향과 맛, 조직감 항목이 중간 점수를 가짐에 따른 모든 항목들의 적절한 조화로 인한 결과라고 생각한다. In this study, we produced macarons by adding white bean powder at various proportions (0, 25, 50, 75, and 100%). The macarons in the 100% additive group had the highest moisture content, smallest volume, highest weight, and highest sugar and reducing sugar content. The macarons in the 50% additive group had the highest spread factor.Furthermore, their pH and acidity demonstrated the greatest air bubble stability. In the Hunter color system, by adding white bean powder, the L value gradually decreased, whereas the a and b values gradually increased. The hardness, gumminess, and chewiness decreased with the addition of white beans. Flavonoids and total phenolic compounds, 1,1-diphenyl-2-picrylhydrazyl (DPPH) radical scavenging activity, and superoxide dismutase (SOD)-like activity were the highest at 100%. Additionally, their overall acceptability was the highest at 50%. These results suggested that the use of white bean powder to produce macarons have numerous advantages.

구강건강에 이용되는 보완대체의학 치료: 무작위대조임상연구를 통한 문헌적 고찰

Objective : This review aims at analyzing Complementary and Alternative Medicine (CAM) therapies, using for oral health to know current use of CAM in dental area by analyzing randomized controlled clinical trials (RCTs). Method : We searched the following 6 electronic databases until 1 July 2014. : Pubmed, Medline, Embase, Allied and Complementary Medicine Database(AMED), Cumulative Index to Nursing and Allied Health Literature(CINAHL), the Cochrane Library. We included parallel RCTs and cross-over RCTs that assessed the efficacy of CAM regardless of blinding and language. Results : A total of 154 RCT articles were included. There were 2-arm parallel study design(69.5%), 3-arm parallel study design(20.8%), 4-arm parallel study design(4.5%) and Cross-over design(5.2%). Complementary and alternative medicine RCTs in oral health tend to increase in the early-2000s and in the mid-2010s. In addition, 154 citations were classified according to diseases and interventions that categorized Natural Products studies(68.2%), Mind and Body Practices studies(31.8%). We classified in detail that vitamin and mineral therapies(29.9%), dietary supplements(24.7%), acupuncture(23.3%), Herbal medicine(13.6%), homeopathy (2.6%), energy therapies(2.6%), Massage(1.9%), biofeedback(0.6%), traditional medicine(0.6%). Conclusion : Increasing publications and diverse interventions regarding CAM for oral health is observed by analyzing RCTs from the literature review. Further studies are needed to be performed as systematic reviews to verify their effectiveness and the research to inquire into side effect.

연세대학교 치위생학과 구강위생교육실을 방문한 대상자의 구강위생관리 서비스체계에 대한 만족도 조사

The setting of dental hygiene clinics is very important to dental hygiene education, which is the place not only to educate students but also to care clients. The purpose of this study is to provide basic research material for improvement of dental hygiene care system in dental hygiene clinics by analyzing the client satisfaction. A questionnaire survey by means of self-entry method was conducted to find out satisfaction of the client, who was visited to the dental hygiene clinics in the department of dental hygiene, Yonsei University. An analysis of frequency, one way ANOVA and T-Test were performed through SPSS 12.0K program. 1. Most clients were mainly composed of students in Wonju College of Medicine. 2. The clients visited for scaling (85.8%) and oral examination (9.73%) were much than treatment(4.42%). 3. Clients aged 21 to 25 were relatively Lower in satisfaction with the facilities, system, attitude than any other ages. 4. The dental hygiene students are the lowest group in satisfaction with the facility, system, attitude than medical and nursing students. 5. The clients satisfaction with dental hygiene clinics was decreased in reverse proportion to visiting frequency. 6. Most of the clients pointed out the problems of appointment system (54.0%) and fee (23.0%), which should be improved than any other operation conditions. 7. Most of the clients were not satisfied with chair time and pain during care. 8. Most clients recognized to receive the better care service than other dental offices (81.3%). Especially, they paid attention to oral health education using phase-contrast microscope. 9. Many clients were dissatisfied with facilities of the dental hygiene clinics (71.7%). The problems of appointment system (54.0%) and chair time of dental hygiene care services (63.6%) had also inconvenienced to clients. The dental hygiene clinics in school play a crucial role in dental hygiene education to foster the student to be competent as a professional dental hygienist in the future. Therefore, well-organized dental hygiene care program based on dental hygiene process is essential. It is also required to improve the environment of dental hygiene clinics including facilities, appointment system and fee etc.

다국어 공통 음소 체계를 이용한 금기어 매칭 시스템

단어의 유사도 측정 알고리즘은 DB 인덱싱, 필터링, 소스코드 분석 소프트웨어, 음성 인식 등 다양한 분야에서 활용되고 있다. 하지만 기존의 단어의 유사도만 비교하는 시스템에는 발음이 비슷한 유사단어나 오타가 있는 유사단어들은 측정을 못하는 단점이 있다. 언어의 유사도 측정에서는 알파벳만으로 볼게 아니라 언어 발음의 발화적 특성 또한 고려되어야 한다. 본 논문에서는 글로벌 시장에서의 다국적 기업들의 제품이나 문화 수출 등의 도움이 되는 각 나라의 금기어와의 발화적 특성까지 고려한 단어 유사도를 측정 할 수 있는 시스템을 제안한다. 11개국의 4개 언어 총 21487개의 금기어 단어를 금기어 데이터로 사용하였다. 제안하는 방법의 성능을 평가하기 위하여 타 알고리즘과의 성능비교와 여러 나라의 다양한 언어의 사용자들로부터 사용자 평가를 수행하였고 제안하는 방법이 발음 유사도를 측정하지 않는 알고리즘보다 우수한 성능을 보임을 확인하였다.

콘텐츠 추천 시스템의 객관적 성능평가 지원을 위한 정확도 평가 시스템 설계 및 구현

추천 엔진의 지속적인 성능 향상을 위해서는 객관적 성능 평가가 이루어져야 하지만, 콘텐츠 추천 기술은 평가 데이터 구축이 어렵고 평가를 위한 심도 깊은 연구가 이루어지지 못하여 많은 어려움을 가지고 있다. 본 논문은 콘텐츠 추천 시스템의 객관적인 평가를 시스템 구축에 대한 연구이다. 추천 알고리즘의 효율적이고 객관적인 성능 평가를 위하여 기존 연구들을 분석하여 대표적인 성능평가 양식들을 구현하였다. 통계적인 평가를 위한 사용자 데이터를 수집하였으며 데이터 크기, 평가방식, 추천 알고리즘의 모듈 별 성능 추이를 쉽게 변경하고 관찰할 수 있도록 인터페이스를 설계하였다. 이러한 평가 시스템의 도입으로 콘텐츠 추천 알고리즘의 지속적인 성능 보완을 기대 할 수 있을 것이다.

쇼핑 서비스를 지원하는 영상통화 인터페이스

WCDMA 의 등장으로 영상통화를 지원하는 휴대폰의 보급은 빠르게 확산되고 있다. 하지만 예상과 달리 사용자들의 실제 영상통화 이용률은 그리 활성화 되지 못하고 있는 실정이다. 본 연구자들은 이러한 현상이 나타나게 된 원인이 영상통화 기능이 단순한 통화기능으로만 활용될 뿐 그 실질적 효용성이 높지 못하기 때문이라 판단하여, 영상 통화를 활성화 시킬 수 있는 방안에 대한 연구를 진행하였다. 오늘날 IT 기반의 서비스 중에 매우 활성화 된 것이 쇼핑 관련 서비스이다. 무선 인터넷과 모바일 환경에서 금융과 통신의 융합이 사회적 화두로 떠오르고, 이러한 이유로 영상통화 기능을 쇼핑과 연계한다면 그 효용성이 매우 커질 것으로 판단하였다. 그리하여 본 연구에서는 사용자 행태 조사을 통해 그들의 needs 를 범주화하고 분석하여 영상통화 쇼핑 서비스 어플리케이션을 도출하였다. 그리고 도출된 어플리케이션의 세부적 절차와 원활한 인터페이스의 설계를 위해 시나리오 형식으로 개발하여 그 형태를 구체화시키고자 하였다.

In this study, in order to investigate the effect of the Wellness Ballet Program on the psychological euphoria and Visual Analogue Scale of adult women, the subjects of the study were targeted to 12 adult women aged 30 years or older living in the Honam District, divided into an experimental group of 6 people and another 6 people into a control group. The experimental group was conducted with the Wellness Ballet Program whereas the control group was conducted by an adult ballet class twice a week for 60 minutes for a total of 24 sessions. IBM SPSS 25.0 was used for data processing, Cronbach's α coefficient for reliability, Shapiro-Wilk for normality test, homogeneity was run by independent sample t-test together with Fisher's exact test, and Mann-Whitney's U test was performed to determine the prior homogeneity of the variables. In addition, to verify the effectiveness of the Wellness Ballet Program, analysis was performed with Mann-Whitney's U test and Wilcoxon's signed-ranks test, and the significance level was set at α=.05. Conclusion: In terms of psychological euphoria, 'hedonic pleasure', 'immersion', 'self-actualization', and 'confidence' among the overall psychological euphoria and sub-factors in the experimental group increased statistically and significantly compared to the pretest, and the degree of pain felt by the individual showed a statistically significant decrease in Visual Analogue Scale of the experimental group during the post-test compared to the pre-test. Through these results, the Wellness Ballet Program explored the possibility of physical rehabilitation and mental healing. Therefore, in the follow-up study, a detailed system of the program is suggested to be used not only in the field of dance but also as a health promotion intervention for the general public.
