        전격도계방법이 육질에 미치는 영향

        This experiment was carried out to investigate the effect of electrical stunning on meat quality in broiler breast muscle. Broiler breast muscles slaughtered by current method and electrical stunning were employed for glycogen content, pH, shortening (%), morphological change and myofibril fragmentation index (MFI) of myofibrils, water-holding capacity and penetration value. The results obtained were as follows: 1. Breast muscles from electrically stunned birds showed higher glycogen contents immediately after slaughtering and slower depletion of glycogen with postmortem time than control birds. 2. The pH of breast muscles from electrically stunned birds showed higher pH immediately after slaughtering and slower fall with postmortem time than that of control birds. 3. Breast muscles from electrically stunned birds showed appreciably lower shortening (%) than control birds under different storage temperature of 3, 8, 16, 27 and 37℃. 4. Myofibrils became increasingly fragmented during postmortem storage and breast muscles from electrically stunned birds in myofibril fragmentation index showed significantly higher increase than control birds after 24hr postmortem. 5. The range of water-holding capacity were 58.7-64.7% and 57.9-62.5% for electrically stunned birds and control birds, respectively. Breast muscles showed the highest W.H.C. at 24hr postmortem. 6. The penetration values of breast muscles were 175.2 and 152.3 for electrically stunned birds and control birds, respectively. Therefore electrically stunned birds were more tender than control birds.

        탄소원을 공급한 폐금은광산 주변 논토양 내 중금속의 지구미생물학적 거동 연구

        The study was conducted to investigate the effects of indigenous bacteria on geochemical behavior of toxic heavy metals in contaminated paddy soil near an abandoned mine. The effects of sulfate amendment to stimulate microbial sulfate reduction on heavy metal behaviors were also investigated. Batch-type experiments were performed with lactate or glucose as a carbon source to activate indigenous bacteria in the soil under anaerobic condition for 100 days. Sulfate (250 mg/L) was artificially injected at 60 days after the onset of the experiments. In the case of glucose supply, solution pH increased from 4.8 to 7.6 while pH was maintained at 7~8 in the lactate solution. The initial low pH in the case of glucose supply likely resulted in the enhanced extraction of Fe and most heavy metals at the initial experimental period. Lactate supply exerted no significant difference on the amounts of dissolved Zn, Pb, Ni and Cu between microbial and abiotic control slurries; however, lower Zn, Pb and Ni and higher Cu concentrations were observed in the microbial slurries than in the controls when glucose supplied. Sulfate amendment led to dramatic decrease in dissolved Cr and maintenance of dissolved As, both of which had gradually increased over time till the sulfate injection. Black precipitates formed in solution after sulfate amendment, and violarite($Fe^{+2}{Ni^{+3}}_2S_4$) was found with XRD analysis in the microbial precipitates. Conceivably the mineral might be formed after Fe(III) reduction and microbial sulfate reduction with coprecipitation of heavy metal. The results suggested that heavy metals which can be readily extracted from contaminated paddy soils may be stabilized in soil formation by microbial sulfate reduction.

        방사성 액체폐기물 내 코발트 제거를 위한 전기응집공법의 활용 가능성 평가

        본 연구는 원자력 발전시설에서 발생하는 방사성 액체폐기물 내 코발트의 제거를 위해 전기응집공법의 적용 가능성을 확인하였다. 전기응집공법은 전기화학반응을 이용하여 폐액 내 오염물질을 제거하는 방법으로 기존의 화학처리와 막공정의 단점을 보완하는 새로운 기술이다. 원자력 발전시설에서는 냉각 배관의 세척과정에서 코발트를 포함한 방사성 액체폐기물이 발생한다. 용액 내 코발트의 농도를 1 mg/L와 10 mg/L로 조성하여 전기응집공법을 적용한 결과 약 10분 이내에 코발트가 완전히 제거되었다. 또한 500 mL의 코발트 용액을 처리하는 과정에서 0.2 g의 슬러지가 발생하여 폐기물의 부피감용에 매우 효과적인 것으로 나타났다. This study assessed an application of electrocoagulation (EC) for the removal of cobalt (Co) in radioactive liquid waste from nuclear power plant. The EC process is an electrochemical means to remove a contaminant in wastewater and a novel process to complement the disadvantage of chemical treatment and membrane process. Radioactive liquid waste has been produced from washing process of radio nuclide power plant cooling system. The EC process eliminates Co from the electrolyte within 10 min; in addition, the dewatered sludge produced in EC process is only 0.2 g. Therefore, the EC process is a promising technique for the removal of Co in radioactive liquid waste and volume reduction of wastes.

        부산지역 일부 대학생의 식습관 및 영양소 섭취상태에 관한 연구

        The purpose of this study was to investigate the dietary habits and daily intake of nutrients in college students. This survey was conducted using a self-administered questionaire. The average heights and weights were 173.5 cm and 72.3 kg of male students and 161.8 cm and 57.2 kg of female students. The average of BMI was 24.2 kg/m2 of male and 21.9 kg/m2 of female, and the value of male students was higher than the value of female students. The response to the daily meals was 54.6% for ``2∼3 times/week``. The regularity of mealtime was 41.7% for irregular and the frequency eating after nine was 45.7% for ``5-6 times/week``, respectively. The repast was 72.2% for ``overeating and little eating`` and was a significant difference of male and female students (p < 0.05). The eating rate was higher ``10 ∼20 min``. As for breakfast food eaten, skipping breakfast was 23.6% for ``no/week`` and female students were higher than male students (p < 0.05). The frequency of snacks was 36.0% for ``nothing`` of males students and 34.8% for ``3- 4 times/week`` of female students (p < 0.05). The type of snack was a significant difference of males and females students (p < 0.01), and was the highest 75.0% for carbonated drinks of males and 37.5% for snacks of females. The eating due to stress solution was a significant difference of male and female students (p < 0.01), and was the highest 23.0% for ``frequency`` of males and 44.7% for ``sometime`` of females. As for food intake of male and female students, the meat intake was 66.7% for ``everything of male and female students. The fish intake was 68.1% for ``1- 2times/week``. The milk, milk products, eggs and beans were each 40.3%, 58.3%, 56.9%, 47.2% for ``1-2 times/week`` (p < 0.05). The fat intake was 55.6% for ``1∼2 times/week``. The average consumption of energy was 58% of male and 67% of female of estimated energy requirement (EER). Their mean ratio of carbohydrate : protein : fat was 57 : 15 : 28 of all subjects. The mean intakes of vitamin C and folic acid were 70% and 51% of males and 62% and 52% of females of recommended intake (RI). The mean intakes of Ca, P, Fe and Na were 71%, 140%, 146% of males and 72%, 122%, 76% of female of RI and 273% of males and 233% of females of adequate intake (AI). Therefore, nutritional education is necessary for college students to establish physicall and mentall optimal health conditions through nutritional intervention.         새송이 버섯을 첨가한 증편의 관능적, 물리화학적 품질 특성 변화

        전통증편에 새송이 버섯을 첨가하여 증핀의 이화학적, 기계적, 관능적 품질 특성을 조사하였다. 새송이 버섯 첨가량을 달리한 증편반죽의 부피는 새송이 버섯 1% 첨가군이 가장 많이 증가하였고, 제조한 증편의 높이는 새송이 버섯 첨가량이 많을수록 높게 나타나 새송이 버섯 5% 첨가군에서 가장 높게 나타났다. pH는 새송이 버섯 5% 첨가군이 가장 낮게 나타났으며, 수분은 대조군에 비해 첨가군의 수분함량이 유의적으로 낮게 나타났다. 당함량은 발효가 진행되면서 모두 감소하였고, 새송이 버섯 첨가량이 증가할수록 유의적으로 높게 나타났다. 새송이 버섯 첨가 증편의 texture 변화에서 색도 중 L값은 대조군에 비해 새송이 버섯 첨가량이 증가할수록 유의적으로 감소하였으며, 반면에 a값과 b값은 첨가량이 증가할수록 유의적으로 증가하였다. Texture 측정에서는 부착성에서 5%가 가장 높게 나타났고, 탄력성은 새송이 버섯 5% 첨가군이 가장 낮게 나타난 반면 1% 첨가군이 가장 높게 나타났다. 전체적인 기호도는 새송이 버섯 1% 첨가군이 가장 높게 나타났다. 이상의 결과에서 새송이 버섯 증편의 제조에서 이화학적 특성, 기계적 특성, 관능적 특성을 종합했을 때 새송이 버섯 분말을 1%나 3% 첨가하는 것이 증편 제조시 최적의 농도이며 이때 증편의 품질이 향상됨을 확인할 수 있었다. This study investigated possible improvements in the sensory and physicochemical characteristics of jeungpyun by the addition of Pleurotus eryngii powder. The volume of the jeungpyun batter prepared with the 1% Pleurotus eryngii powder showed the highest degree of fermentation. As fermentation continued, pH and saccharinity dropped, and then saccharinity increased as more Pleurotus eryngii powder was added. As the Pleurotus eryngii powder ratio increased, the L-value decreased, but the a- and b-values increased. In the texture profile analysis, the 5% Pleurotus eryngii powder showed the highest adhesiveness and the lowest springiness. For the sensory test, the highest springiness and overall desirability were found in the jeungpyun with 1% Pleurotus eryngii powder. Overall, according to the results of these experiments, the 1% and 3% Pleurotus eryngii powders are thought to be the optimal concentrations for obtaining improvements in quality.

      • 문학작품을 매개로 한 인문주의 영성의 고양

        본 논문은 최근 상담과 심리치료 분야에서 인간의 전인적인 성장과 안녕에 관해 관심을 갖게 되면서 대두하게 된 인문주의적 영성이 삶의 의미와 목적을 찾고 자기를 초월하여 삶을 영위할 수 있도록 돕는다는 점에 착안하여 이를 삶의 현실 속에서 조각나고 굴절된 영혼의 균형을 회복할 뿐만 아니라, 단절되고 소외된 자기와의 화해, 타인과의 화해, 자연과의 화해, 초자연적인 것과의 화해를 통해서 통합적인 자기실현과 영적인 자기종합에 이르게 하는 문학과 문학이 가지고 있던 이러한 기본적인 효능을 좀 더 효과적으로 활용하기 위해 임상심리치료의 차원에서 문학을 활용하는 문학치료와 연결시켜 그 효능 과 기제를 살펴보고자 하였다. 문학치료는 첫째, 무너진 대상 복구와 항상성, 카타르시스를 통한 외재화 등의 기제와 더불어 변증법적 정신의 종합기능을 통해 자아(ego)의 심리학적 치유와 영적 세계의 통합을 시도하는 전인적 차원에 대해 접근하는 하나의 인식과정이라는 점을 밝히고자 하였다. 인간의 내면에 창조성과 신성이 내재되어 있다는 전제 하에 문학치료는 인간의 경험을 더 넓고 깊은 차원까지 확장함으로써 우리가 초월적이고 영적인 영역으로 나아갈 수 있도록 함과 동시에 본래의 자기(Self)를 만나고, 궁극적인 삶을 찾아가는 영적 여정의 매개로 사용될 수 있으며, 나아가 우리를 발전시키고 성장시키는 치유 도구로 활용될 수 있다는 점을 밝히고자 하였다. In the light of the recent interest in holistic human growth and well-being in the field of counseling and psychotherapy, this paper try to revealed the mechanisms based on the ideas of the humanistic spirituality that research the aim and the meaning of life, and it helps to transcend the life, the literature not only restores the balance of disrupted and refracted souls in the real world of life, but also the reconciliation with disconnected and alienated self, and the reconciliation with others, reconciliation with nature and with the supernatural, and wanted to link literature to literary therapy utilizing literature in terms of clinical psychotherapy in order to make more effective use of these basic effects of literature and literature that led to integrated self-realization and spiritual synthesis. First, literary therapy has the mechanism of restoration and homeostasis of collapsed objects, and externalization through catharsis. In addition, it was intended to demonstrate that it is a recognition process that approaches the holistic dimension of psychological healing of ego and the integration of spiritual world through the function of dialectical synthesis of mind. Subject to the premise that creativity and divinity are inherent in man s inner self, literary therapy extends human experience to a wider and deeper dimension, allowing us to move forward into transcendent and spiritual realm. At the same time, it could be used as a medium for spiritual journey to meet the original self, to seek the ultimate life, and that it could be used as a healing tool to inspire and grow us.
