먹장어를 練製品原料로서 利用하기 위한 基礎資料를 얻고자 먹장어 어묵의 最適加工條件을 實驗한 結果를 要約하면 다음과 같다. 採肉한 肉에 대하여 澱粉은 5%, 食鹽은 3%, tripolyphosphate는 0.3%, 水洗回數는 6回, 1段加熱은 45∼50℃에서 1時間, 2段加熱은 90℃에서 30分間이 좋았다. 1段加熱 대신 자연응고 현상을 이용할 경우에는 25℃에서 1時間 자연응고 시킨 다음 90℃에서 30分間 加熱하는 것이 좋았다. In this study, the effects of some additives to the quality of fish jelly product such as salt tripolyphosphate and starch were examined. Besides, that of washing and stepwise heating procedure were also discussed. From the result of quality test by measuring jelly strength and sensory evaluation the product was quite palatable to common, and the addition of 3 percent of salt and 5 percent of starch resulted in the best jelly strength. It was markedly enforced when 0. 3 percent of tripolyphosphate was added. The suggestible processing method of hagfish jelly product is as follows : The meat is to be bleached by washing at least 6 times with tenfold tap water by volume of meat at 5-6℃ and then ground throughly with addition of 3 percent of salt, 5 percent of starch and 0.3 percent of tripolyphosphate. The ground meat is finally to be heated for 1 hour at 45 to 50 ℃ and then for 30 minutes at 90℃.

Effect of chitosan concentration (1 and 2% w/v) on internal quality of eggs coated with chitosan prepared withoutdeproteinization step was evaluated during 5 wk of storage at 25othe internal quality of eggs than with 1% chitosan. Coating with 2% chitosan increased the shelf-life of eggs by about 2 (basedon yolk index) or 3 (based on Haugh unit) wk at 25oC compared with that of noncoated eggs. Use of chitosan prepared withoutdeproteinization step as an egg coating material is advantageous in view of considerable reduction in chitosan production cost.

The CD4+CD25+ T regulatory cells (Tregs) play an important role in immune tolerance in experimental transplantation but the clinical significance of circulating Tregs in the peripheral blood is undetermined. In 50 kidney transplant (KT) recipients, 29 healthy controls and 32 liver transplant (LT) recipients, the frequency of Tregs was measured with flow cytometry before and after transplantation. In the KT recipients, IL-10 secretion was measured with an enzyme-linked immunospot (ELISPOT) assay. The median frequency of circulating Tregs before KT was similar to that in healthy controls but significantly lower than that in LT patients before transplantation. The frequency of Tregs was significantly decreased in patients with subclinical acute rejection compared with those without subclinical acute rejection. Calcineurin inhibitors (CNIs) and anti-CD25 antibody decreased the frequency of Tregs but mTOR inhibitor did not. The frequency of donor-specific IL-10 secreting cells did not correlate with the number of Tregs. The frequency of circulating Tregs in KT recipients is strongly affected by CNIs and anti-CD25 antibody, and a low frequency of Tregs is associated with subclinical acute rejection during the early posttransplant period.
A Case of Acute Carbon Monoxide Poisoning Resulting in an ST Elevation Myocardial Infarction

Carbon monoxide (CO) is a well-known chemical asphyxiant, which causes tissue hypoxia with prominent neurological and cardiovascular injury. After exposure to CO, several cardiac manifestations have been reported, including arrhythmias, acute myocardial infarction, and pulmonary edema. However, an ST elevation myocardial infarction (STEMI) due to CO poisoning is a very rare presentation, and the treatment for STEMI due to CO poisoning is not well established. Here, we report a rare case of STEMI complicated by increased thrombogenicity secondary to acute CO poisoning and complete revascularization after antithrombotic treatment.
