This study was carried out to develop a kiwi dressing which was lower in calories and a more beautiful color by using Kiwi rather than mayonnaise. This study was aimed to standardize a recipe for kiwi dressing using sensory characteristics as well as to examine the changes of pH and chromaticity by the storage period. Results of this study were as follows: from the results of sensory evaluation on kiwi dressing using different kinds of oil, the pure olive oil showed the higher scores than the corn oil in the taste, fresh-sour taste and overall palatability. Sensory evaluation scores of kiwi dressings with various amounts of oil were not significantly different, which suggested that use of kiwi for a dressing was a good way to develop a low calorie dressing because the addition of 32% (160g) oil in kiwi dressing could replace the 75% oil used in mayonnaise without any significant differences in the overall palatability. From the result of sensory evaluation on kiwi dressing with different kinds of' acid, lemon juice showed the higher scores than apple vinegar in flavor. The kiwi dressing showed the highest scores in the overall palatability and fresh-sour taste when 12% (60g) onion juice was added and in as well as flavor, taste and the overall palatability at 10 days of storage. The pH values of kiwi dressing increased significantly in proportion to the storage period (p<0.001), and showed the highest pH value of 2.99 at 17 days of storage. Lightness in color showed the lowest value at 3 days of storage and the greenness of kiwi dressing increased gradually, but the yellowness decreased significantly in proportion to the storage period(p<0.001).

The measurement of the radiation energy, trunk temperature, leaf area index(LAI), air temperature,vapor pressure, and precipitation has been conducted under a mixed forest at Kwangneung Arboretum during the period of 2001. Characteristics of the diurnal and seasonal variation of the radiative energy were investigated. The aerodynamic roughness length was determined as about 1.6m and the mean albedo was about 0.1. The downward shortwave radiation was linearly correlated with the net radiation and its correlation coefficient was about 0.96. From this linear relation, the heating coefficient was calculated and its annual mean value was about 0.21. The albedo and heating coefficient was varied with season, surface characteristics, and meteorogical conditions. The diurnal and seasonal variations of radiation energy were discussed in terms of the surface characteristics and meteorological conditions. In the daytime, during clear skies, net raditaion was cominated by the shortwave radiation. In presence of clouds and fog, the radiation energy was diminished. At night, the net radiation was entirely dominated due to the net longwave radiation. There was no distinct diurnal variation in net radiation flux during the overcast or rainy days. The net radiation was strongest in spring and weakest in winter. The seasonal development in leaf area was also reflected in a strong seasonal pattern of the radiation energy balance. The timing, duration, and maximum leaf area and trunk temperature were found to be an important control on radiation energy budget. The trunk temperature was either equal or warmer than air temperature during most of the growing season because the canopy could absorb a substantial amount of sunlight. After autumn(after the middle of October), the trunk temperature was consistently cooler than air temperature.
최근 10년간 원광의대병원에서 시행한 소아 심장혈관 수술의 임상적 고찰

We reviewed 10 years experiences of the clinical aspects and early postoperative results in 544 pediatric patients(age less than 16 years old). Among them. 529 cases had the congenital heart diseases, and 15 had the acquired diseases. Open heart surgery was performed in 413 patients. 115 cases were treated with non-open heart surgery. 16 with interventional catheterization. Annual increase of the cardiac patients was not significant in recent 10 years, except slight increase in 1994. The mean age of the study patients had been evidently changed to younger year by year. Total mortality rate of the open heart surgery was 6.4%. The cyanotic congenital heart diseases were high in early postoperative mortality by 25.7%, whereas 4% in acyanotic group. The age group less than one month was most highest in surgical mortality(66.7%). There were no deaths in patients with patent ductus arteriosus(103 cases), atrial septal defect(83 cases) or pulmonary stenosis(17 cases). Among 220 patients with ventricular septal defects(VSD). 10(4.5%) were died early postoperatively. In cyanotic group, the patients with pulmonary atresia with ventricular septal defects(PAVSD), transposition of the great arteries(TGA), interrupted aortic arch(IAA), complex cardiac anomalies with isomerism seemed to be most susceptible to an early death.
구성주의 접근에 기초한 인지이론이 유아교육에 주는 시사점

최근 유아교육의 분야는 구성주의 접근에 기초한 인지이론의 영향을 받고 있는데, 이들은 Piaget 이론, 신-Piaget 이론과 Vygotsky이론이다. 구성주의 접근의 기초를 제공해주는 Piaget이론과 신-Piaget이론, Vygotsky 이론은 모두 인간의 사고과정 발달에 관심을 갖고 연구한 이론들로서 지식형성에 대한 유아의 능동적 역할을 강조한다. 본 고에서는 세 이론들을 고찰하고, 비교함으로써 구성주의적 접근법의 이해와 적용에 주는 시사점을 찾아보고, 유아교육과정과 교수학습방법의 이론적 방향의 기초를 마련하고자 하였다. The early childhood education are influenced by the constructivist perspectives. The constructivist perspectives on cognitive theory are Piaget theory, Post-Piagetian theory, Vygotsky theory. These theories were interested with development of thinking process and knowledge construction and stressed child's active roles. And also suggested important teaching-learning principle and curriculum in early childhood. We considered three theories, and then compared, made an offer the suggestion of these theories to early childhood education.
유아교육 현장에서의 프로젝트 접근법 적용 실제 : 주제 '공룡' Dinosaur

프로젝트 접근법은 유아들의 사회-정서 발달, 창의성 및 문제해결능력을 향상시키는 통합 교육과정이다. 주제 '공룡'을 유아교육 현장에서 전개하면서 유아들은 '공룡'에 대한 브레인스토밍, 유목화, 주제망을 구성하고 다양한 활동들을 탐색하고 경험하였다. 본 연구는 우리 나라 지역사회의 맥락에 적합한 교육과정의 모델을 개발, 적용해 보는데 그 의의가 있다. The Project Approach is integrated curriculum for children to increase in social-emotional development, creativity and problem-solving. As children develop the topic of this study, 'dinosaur', they explore and experience dinosaur activities in the brain storming, collecting the items, labeling categories, and making the web about 'dinosaur'. The purpose of this study is to develop and applicate curriculum model in the context of community.
재배 콩나물 저장 중 온도처리가 isoflavone 함량에 미치는 영향

콩나물로부터 고 isoflavone 함량의 콩 식품윈료를 얻고자 콩나물 재배 시 빛을 쪼여주고, 재배한 콩나물의 저장온도를 달리한 조건에서 isoflavone 함량변이 를 조사하였다. 공시 품종들의 7일 재배 후 저장하기 전 isoflavone함량은 아가 3호>아가 1호>아가 2호>아가 4호>장기콩>보석콩>은하콩>풍산나물콩 순이었는데 아가 3호의 isoflavone 함량은 4,619㎍/g이었다. 재배한 콩나물의 isoflavone 함량은 저장온도에 따라 품증별로 상이한 차이를 보였는데, 저장온도 6℃와 20℃에서 isoflavone함량이 높은 반면 저장온도 9℃와 30℃에서는 대부분 콩 품종들의 isoflavone 함량은 낮았다. 저장일수에 따른 isoflavone의 함량은 품종들 간에 일정한 경향이 없었으나 대부분의 품종들은 저장기간 3일 이내에 가장 높은 isoflavone 함량을 보였고, 아가 4호와 장기콩은 저장기간 5일에서도 높은 isoflavone의 함량을 보였다. 저장기간과 온도처리를 하여 재배한 콩나물의 isoflavone 함량을 높이고자 한 결과 아가 3호를 포함하여 공시한 8품종 중 4품종에서 20'C에서 하루 동안 저장했을 때 가장 높은 isoflavone의 함량을 나타내었다. 재배한 콩나물들 중 저장을 통해 가장 높은isoflavone의 함량을 보인 품종은 아가 3호로써 저장후의 isoflavone 함량은 11,705㎍/g이었다. 본 연구에서는 콩나물 저장기간 동안 수분공급이 지속적으로 이루어겼기 때문에 콩나물이 계속 성장한 것으로 생각된다. 따라서 저장기간 동안 온도처리를 달리하여 isoflavone의 함량을 증가시키는 보다 확실한 방법을 확립하기 위해서는 더 많은 연구가 이루어져야 할 것으로 생각되어진다. To obtain food materials of high isoflavone content from soy-sprouts, 8 soy-sprout varieties, Aga 1, Aga 2, Aga 3, Aga 4, Pungsannamulkong, Eunhakong, Jangkikong and Bosugkong, were grown into soy-sprouts for 7 days under light condition and stored for 5 days at 6 different temperatures; 3, 6, 9, 20, 30, and 40℃ in the dark. The isoflavone content of 7 days grown sprout varieties were highest in the order of Aga3>Aga 1>Aga 2>Aga 4>Jangkikong>Bosugkong>Eunhakong>Pungsannamulkong. The highest isoflavone content of Aga 3 was 4,619 ㎍/g. The isoflavone content of soy-sprouts showed much varietal differences depending on the storage temperatures. Comparative high isoflavone content was obtained at storage temperatures of 6℃ and 20℃ while most of varieties showed low isoflavone content at 9℃ and 30℃. No constant trend in isoflavone content for the tested varieties along with the days to storage but most of varieties showed the highest isoflavone content in 3 days of storage. On the contrary, Aga 4 and Jangkikong showed high isoflavone content even at 5 days of storage . The comparatively high isoflavone content for 4 varieties including of Aga 3 out of 8 varieties was obtained from the treatment of one day storage at 20℃. Out of all treatments, the highest isoflavone content was obtained from one day storage at 20℃ for Aga 3 and the content was as high as 11,705 f-㎍/g. In this experiment, soy-sprouts were believed to be made continuous growth during the storage because the sprouts were being dipped in water during the temperature treatment to protect soy-sprouts from drying. Thus, it is inferred that additional researches should be made to establish better method to increase isoflavone content in soy-sprouts during the storage.
대장균에서 재조합 Rat Guanine deaminase 유전자의 발현, 정제 및 분석

Guanine deaminase(EC, 3.5.4.3, ;Guanine aminohydrolase, GAH, GDA) catalyzes the deamination reaction of guanine to xanthine irreversibly. The cDNA encoding rat guanine deaminase had been isolated from a λZAPII rat brain expression library using antibody generated against purified rat guanine deaminase. Toe obtain recombinant GDA and analyze the property of catalytically conserved retion, here we expressed the recombinant GDA in E.coli and showed the retention of its catalytic activity similar to native rat GDA. To make the construct carrying coding region to GDA in pGEX4T prokaryotic expression vector, the region encompassing open reading frame of pBlue-GDA was PCR amplified and subcloned into pGEX4T prokaryotic expression vector with correct reading frame of fusion carrier glutathione S-transferase. After transformation to E.coli DH5a. The bacteria carrying pGEX-GDA was grwon in the condition of IPTG induction. The fusion protein GST-GDA was purified with GSH-sepharose affinity chromatography. The purified GST-GDA was subsequently digested with biotin-conjugated thrombin, and thrombin was removed by streptavidin agarose. Then sample were treated with GSH-sepharose affinity chromatography to remove the contaminant GST and GST-GDA. The purified recombinant GDA showed 70% of specific activity relative to that of purified rat GDA. The recombinant GDA showed identical molecular weight with rat GDA in SDS-PAGE.
하루 콩단백질 25g 섭취를 위한 메뉴작성 및 영양성분 분석

The purpose of this study was to develop menus for daily intake of 25g soybean protein and to analyse nutrients of these foods. Analytical values were compared to the theoretical one using the food composition table and recommended dietary allowances for Koreans (7th revision). The results are as follows. 1. Soybean curd residue stew, Soybean curd, Kimchi saute, and hard boiled soybean and lotus root were selected for the menu for January, of which the content of soy bean protein(SBP) was 33.1g, soybean stew, soybean curd and soybean sprout saute, and Italian deep fried soybean curd were for February, of which the content of SBP was 35.0g. The content of SBP in soybean paste soup with soybean curd, fried soybean curd and fried soybean curd roll, the menu for March, was 24.9g. That of April were soybean curd gratin with soymilk, soybean curd and ham with garlic dressing and the content of SBP was 26.3g. That of May were soybean porridge, soybean flour cake with honey (Dasik), soybean sprout soup and the content of SBP was 26.7g. That of June were soymilk, pan-fried soybean curd, steamed soybean curd with chicken and the content of SBP was 28.4g. That of July were noodle with soymilk, mapatofu, soybean curd salad and the content of SBP was 24.7g. That of August were soybean sprout with mustard dressing, Tossed green pepper with raw soybean flour, Tofu and Kimchi stew, soybean curd steak and the content of SBP was 26.2g. That of September were Chinese cabbage soup with raw soybean flour, sweet and sour tofu and the content of SBP was 23.2g. That of Oct. were Fermented soybean stew, soybean pan cake and the content of SBP was 24.3g. That of November were not-pressed soybean curd casserole, pan-fried mashed soybean curd with egg, stir frying deep-fried soybean curd with vegetables and the content of SBP was 22.4g. That of December were soybean curd and mushroom casserole, fried soybean curd and vegetables, hard boiled soybean curd and the content of SBP was 28.9g. 2. The ratio of the analytical value over theoretical value (A/B%) of one serving in kcal, carbohydrate, protein, fat, ash and dietary fiber were 57.7~107.7%, 42.9~131.9%, 79.2~118.3%, 54.5~100%, 40.7~80.8% and 42.1~113.2%, respectively. 3. The ratio of A/B% of one serving in Ca, K, Na, P and Fe were 44.1~93.6%, 59.0~153.1%, 53.1~117.7% 64.6%~138.8 and 33.8~77.3%, respectively. That in Fe was the lowest among minerals. 4. The ratio of analytical value over Korean R.D.A(A/C%) in Ca was relatively higher (22.0~85.9%) than that in kcal(18~63%). 5. The ratio of A/C% in Fe was 25.1~64.3% and lower than that in Ca and protein in general.

Purpose: The purpose of this study was to identify and evaluate outcome measurement scales of nursing education such as communication, professionalism, leadership, and critical thinking. Methods: A methodological study design was used to evaluate the reliability and validity of the scales. Survey was done to the students (n=407) enrolled in baccalaureate nursing schools. Using convenience sampling method, we tried to include all grades of students. Internal consistency, convergent validity and group comparison were used to evaluate the reliability and validity of the scales. Results: All scales were reliable and valid. Only convergent validity of the scale to measure critical thinking was relatively low. It suggested that critical thinking skill and disposition might be measured separately. Also it was inefficient to measure the nursing education outcomes with separate scales. Conclusions: It is recommended to develop a new integrative scale to measure nursing education outcomes. Also it is necessary to set the norm of nursing students to evaluate nursing education outcomes for the quality control of nursing education.
