Mechanical properties and gas permeabilities of edible films based on the blends of pectin with starch plasticized with glycerol were investigated. Tensile properties of pectin/starch blend films were changed significantly by the amount of glycerol and the ratio of pectin/starch. Tensile strength and modulus decreased as the content of glycerol increasing. With increasing glycerol content, elongation at break increased. Water absorption of pectin/starch blend films was changed by amount of glycerol but it was relatively little changed by the ratio of pectin/starch. Oxygen permeability of pectin/starch blend films was generally lower than of plastic films.
