In this study, trimethylamine oxide, trimethylamine and dimethylamine contents of sun dried and cold storage salted samples of Codlichlhys fragilis were analyzed and quantitatively compared.
1. In pH, free amino nitrogen and VBN, fresh degree was decreased sun dried salted samples than cold storage salted samples.
2. TMAO contents remained in sun dried salted samples were relatively lower than cold storage salted samples.
3. TMA contents gradually increased with the decrease of TMAO, and sun dried salted samples were relatively higher than cold storage salted samples.
4. DMA contents gradually increased with the decrease of TMA, and sun dried salted samples were relatively higher than cold storage salted samples.
The results suggested that DMA contests increased correlatively with the TMA contents whereas TMAO contents inversely decreased.
TMA and DMA contents of sun dried salted samples were relatively higher than cold storage salted samples.
