        대구지역 남자 대학생의 음주 실태와 음주 행동에 관한 연구

        This study was conducted to investigate the changes in alcohol consumption of male university students in Daegu, Korea and their drink-related behavior. The study focused on these changes over a decade using self-administered questionnaire surveys and health examinations that were carried out at a university campus in 1999 and in 2009. In both years more than 85% of students responded that they drank alcohol. However, significant increases in the frequency and amount of alcohol consumption were found (p<.001). The main influence on students’ drinking behavior was friends/peers in both years. The most frequently preferred alcohol of respondents was so-ju (a traditional Korean liquor) in both years. However, the most frequently preferred type of food to accompany drinking had significantly changed (p<.01). Other changes including the increase of drinking speed and smoking during drinking were found to have significantly changed (p<.05) while significant difference regarding the decrease in food intake during drinking was not found. No significant difference in the amount of alcohol consumed was noted between underage drinkers and drinkers of above the legal drinking age. Heavy drinkers in the 2009 population had significantly higher systolic blood pressure than non-drinkers and moderate drinkers (p<.01). This study also indicates that there may be a rise in heavy drinking and/or binge drinking among drinkers including underage students. The results of this study suggest that alcohol-blood pressure associations are considered to be of concern even in young adults. This study also suggests the need for special alcohol prevention programs or campaigns to intervene in the behavior of students.

        일부 공중화장실 위생설비의 오염지표세균 조사

        Objective: The purpose of this study was to investigate the occurrence of indicator organisms in essential sanitary ware in public restrooms. Methods: Twelve public restrooms were randomly selected. Samples at three locations (toilet seat, toilet flush handle/lever, and faucet handle) in the restrooms were collected with moistened-sterile cotton swabs and applied to media in order to determine aerobic colony count (ACC), total coliforms, and Escherichia coli. Results: Most of the samples taken in summer showed a higher level of ACC than those taken in winter (p<0.05). Female restrooms showed higher ACC levels on faucet handles and male restrooms on toilet flush handles/levers (p<0.05). Overall, faucet handles contained the greatest level of ACC, followed by toilet seats, whereas the least load was found on toilet flush handles/levers. The ACC level of samples in the restrooms in public parks, subway stations, and educational institutions varied. Total coliforms were identified in about 20% of toilet seats and faucet handles in male restrooms and faucet handles in female restrooms in summer. These locations were also the sites of positive results of E. coli isolation. Conclusions: The public restrooms were significantly more contaminated in summer than in winter. Overall, the most contaminated locations in the restrooms were toilet seats in male restrooms, and faucet handles in female restrooms. Poor hygienic status was indicated by the positive results of total coliforms and E. coli on samples from some sites. Therefore, sanitary control of restrooms should be improved. These results should be confirmed in a larger study that includes more public restrooms.

        가열 처리에 따른 커틀릿의 식품안전성 확보 조건 - 내부 중심온도, 색도 및 위생지표미생물을 중심으로 -

        Objectives: This study was performed to investigate the effect of cooking time on the internal temperature and color of cutlets and the reduction of indicator organisms in cutlets by cooking. Methods: Three kinds of commercially packed frozen cutlets (pork, chicken and fish cutlets), were purchased from local markets. The cutlets were cooked in a frying pan at $180^{\circ}C$ for four minutes. Internal temperature was measured with a food thermometer. Color was measured using a Hunter spectrocolorimeter. Aerobic colony counts, coliforms, and Escherichia coli were determined according to the Food Code of Korea. Results: The internal cooked temperature of every cutlet reached over $74^{\circ}C$, the temperature considered safe, after three minutes, while external temperature reached this level in two minutes (p < 0.001). The instrumental color value as lightness (L) in the cooked cutlets significantly changed (p < 0.001) after one minute. The level of aerobic colony counts of fresh cutlets was under the specification and was reduced to one tenth its level in the cooked cutlets. Coliforms and E. coli were not detected in all samples. The internal temperature of the cutlets was significantly affected by cooking time and weight (p < 0.001). The interaction effect of time and weight was also significant (p < 0.001), and time was the more influential factor. Conclusion: The results of this study indicate that the sampled cutlets should be cooked for a minimum of three minutes or more in order to ensure food safety. The results also indicate that if consumers cease cooking based on external temperature or color, there will be a risk of inadequate cooking.

        식품산업체가 겪는 위기의 분류와 위기 수준 판단

        Objectives: Food safety has become one of the major public-concerning issues in Korea. In order to set guidelines to create manuals for the response to a food safety crisis by food industry, this paper classified food safety crises and suggested techniques to determine crisis level. Methods: This study clarified common terminologies and definitions including in food safety crises. It reviewed various food safety crises and described characteristics, types, and states of crises. Results: The results of this study suggested that a food safety crisis implied a situation in which hazards/risk spreading in the food supply chain was widely described, causing strong public concern followed by a socioeconomic impact, and therefore, requiring the implementation of a prompt and full response regarding the situation. In terms of seeking response plans, food safety crises might be classified according to the penalties resulting from violations of laws and regulations, causative substances, stages of the food supply chain, and first contact point for incidents. The crisis level for a food safety crisis could be classified according to its severity parameters. The guideline matrix was divided into four major stages: Blue/guarded, Yellow/elevated, Orange/high, and Red/severe. This study also suggested several methods for determining the crisis level, such as the simple judgement method, scoring methods using a check-list and a weighted check-list. Conclusion: The severity of related parameters might be of great importance in understanding a crisis and determining response options/challenges for crisis levels.

        초등학생의 식품위생안전에 대한 지식, 태도 및 실천에 관한 연구

        Objectives: The purpose of this study was to evaluate food hygiene and safety knowledge, attitudes, and practices (KAP) among the elementary school children, and furthermore, to explain the interrelations among these three variables. A second purpose was to compare gender differences of KAP. Methods: A self-administered, structured questionnaire was designed and completed by 376 elementary school children. A five-point Likert scale with twenty questions was used to gather information. Data was analyzed by frequency analysis, Pearson's correlation and analysis of variance or Student's t-test. Results: Children generally had good knowledge of food hygiene and safety, and knowledge of children was superior to the attitudes and also to their practices (p < 0.05). The attitude score was mediated between knowledge and practice scores. Significant differences (p < 0.05) were found between boys and girls in an item of knowledge, three items of attitudes, and six items of practices. A significant positive correlations were observed between knowledge and practices (${\gamma}$ = 0.70, p < 0.001), and between attitudes and practices (${\gamma}$ = 0.45, p < 0.001), as well as between attitudes and practices (${\gamma}$ = 0.51, p < 0.001), revealing that increased knowledge and even attitudes toward food hygiene safety could result in positive change in practices or behaviors. Conclusions: The results of this study indicate that despite good knowledge and attitudes of children, their practices toward food hygiene and safety are not acceptable. Gender differences in practices were highlighted. In order to create effective educational interventions on the food hygiene and safety of children, a better understanding of their awareness and the required related information is necessary.

        여성의 손 위생관리에 관한 연구

        Objectives: This study was performed to investigate hand washing awareness of females and load of indicator bacteria on their hands. This study focused on the variation according to their age. Methods: A self-administered questionnaire survey and bacterial analysis of indicator bacteria were carried out for 100 Korean women in their age from 20 s to 60 s. Hand samples were collected through a modified glovejuice method. Results: In the survey, significant difference (p < 0.05) was found among the age groups in the use of hand washing agents. The levels of aerobic colony count (ACC) were the highest in both hands among the 20s (p < 0.05). The levels of Escherichia coli were higher in both hands in their 20s and 30s. No significant difference was found in the levels of Staphylococcus aureus and Salmonella spp. However, the positive rates of S. aureus (left hand, 37.5~47.1%; right hand, 58.5~62.5%) and Salmonella spp. (left hand, 25.0~52.9%; right hand, 37.5~64.7%) were higher in the hands of the 20s and 30s, and then showed decreasing trend according to increase of age. The effect of hand washing frequency on the ACC level of hands was significant (p < 0.001). Conclusions: These results indicate that there was no remarkable difference of hand hygiene awareness among female age groups. The detection of S. aureus and Salmonella spp. on the hands of some females in each age group revealed poor hand hygiene practices. The significant effect of hand washing frequency on the ACC level suggests that frequent hand washing is helpful to reduce hand contamination.

        조리종사자의 손 씻기 의식과 실천 및 손의 지표미생물 오염도에 관한 연구

        Hand-washing is one of the major factors in personal hygiene and public health. This study was undertaken to investigate the hygienic behavior of food-service employees, focusing on awareness of hand washing, hand washing practices, and the load of index microorganisms (aerobic plate count, total and fecal coliforms, Escherichia coli, and Staphylococcus aureus) on the hands of food-service employees. A questionnaire survey completed by direct interview, direct observation of restrooms by the researcher and trained observers, and microbiological examination according to the Food Code of Korea were carried out. In the survey, a positive attitude toward hand washing compliance was reported; however, improper hand washing and poor hand hygiene of the food-service employees were seen under direct observation. Significant differences (p<0.05) were found between the questionnaire survey and the direct observations in hand washing compliance after using the toilet, duration of hand washing, use of hand washing agents, use of hand washing tools, washing of different parts of the hands, hand-drying method, temperature of water, and method of turning off the water. Samples taken from employees' hands before washing showed higher levels of bacteria than those taken during work and/or after washing (p<0.05). Poor hand washing practices were indicated by the positive results for total and fecal coliforms, E. coli, and S. aureus on the hands of some food-service employees. This study showed that there is a marked difference between the food-service employees' awareness of hand-washing and their actual hand-washing practices. The poor hand hygiene of and improper hand washing by the food-service employees should be addressed for improved food safety.

        젊은 여성의 식습관 및 건강관련 생활습관과 피부건강과의 관련성 연구

        This study was performed to investigate the effects of food habits and life style on the skin health of young Korean females in their late teens and twenties. The study focused on facial skin and used a self-administered questionnaire survey, an examination of skin type, and pH tests. More than half of the females had combination skin type or pH level higher than 5.8 which is regarded as normal. The variables that turned out to significantly (p<0.05) effect their facial skin types were body mass index (BMI), the type of residence, the amount of water intake, whether or not they intake drinks, the frequency and amount of alcohol drinking, favorite foods as side dishes at meals, intake frequency of fruit, the dairy, seaweed, and fast food, the frequency of washing their faces per day, the method of how they used water during face washing, whether or not they had professional skin care, and whether or not they wore color make up. The variables of the females age, BMI, the amount of alcohol drinking, the frequency and duration of exercise, the controlling methods of stress, their favorite foods as side dishes at meals, and the intake frequency of soy products or animal foods significantly affected their facial pH levels (p<0.05). The results of this study indicate that some food habits and life styles are significantly related with facial skin health. More importantly BMI and favorite foods as side dishes during daily food intake could have remarkable effects on facial skin health.

        조리과정 중 중심부 온도의 변화

        The temperature changes of dumpling(mandu) during cooking process were examined and the effects of time-temperature and/or time-size interactions on internal temperature were studied. Mandu was purchased from local markets and classified by its weight(small, medium, and large). Boiling, steaming, pan frying, and deep fat frying were adopted. Internal temperature was measured with a food thermometer in every one minute. The internal temperature of mandu increased over time in every cooking process(p<0.05). After three minutes the internal temperature of mandu in boiling, pan frying, and deep fat frying reached over at 74℃, which is high enough temperature to kill the harmful bacteria, but not in steaming. The internal temperature of mandu was significantly affected by cooking time, size, and both in boiling, steaming, and deep fat frying(p<0.05). There were significant differences between the internal and surface temperatures of mandu in the cooking processes except pan frying in three minutes(p<0.05). The results of this study indicate three minutes cooking of the mandu by boiling, pan frying, and deep fat frying is safe enough to eat. However, longer steaming time is needed in order to reach safe temperature. This study also indicates the cooking time and size of mandu appear to be major factors in determining the internal temperature achieved at 74℃. More research is needed to check time to reach a safe temperature in the cooking process of mandu by steaming.

        식품산업체의 위기관리 조직 및 위기대응 절차

        Objectives: Promotion of food safety/eradicating adulterated food has been listed as one of the four major issues recently identified for action by the Korean government. Due to the related seriousness, the food industry has been encouraged to take steps to restore consumer confidence. In order to set guidelines for the creation of manuals for the response to a food safety crisis by the food industry, this study provided a suggested organization for a crisis response team and operating procedures for crisis response activities. Methods: The prototypes of an organizational structure and a set of standard procedures for a crisis response system were provided. Results: The results of the study suggested that a crisis response team should be comprised of four divisions of responsibility: information analysis, site response, communication and operational support. The organization chart and the role and functions for each division of the crisis response team should be indicated. Response activities will be more effective when the team features multi-disciplined staffing, such as public relations, food safety/technology/quality, sales/marketing, purchasing, production, distribution/logistics, regulatory affairs/legal, and consumer service specialists. This study created a flow chart for the total crisis response system, which included crisis and normal situations. A crisis response team should be continuously operated for both crisis and normal conditions. This study also suggested a scenario to explain the procedures for crisis response activities. Conclusion: In order to cope more effectively with a food safety crisis, the organizational structure and its functions should be defined clearly, and a detailed set of standard procedures for response activities should be offered.
