동해 덕산항에 생육하는 포기거머리말(Zostera caespitosa Miki)군집의 생물계절학과 형태 변이를 1998년 3월부터 2000년 8월까지 조사하였다. 포기거머리말의 형태적인 형질(식물체 길이, 잎 길이, 엽초 길이, 잎 너비와 잎 수), 생식 형질(불염포, 육수화서와 종자)의 수와 크기, 생육밀도, 생물량과 이화학적 특성(수은, 영양염 농도)를 관측하였다. 형태적인 형질은 엽초를 제외하고 계절에 따라 유의한 차이(p<0.05)를 나타내었다. 식물체 길이는 수온에 따라 명확한 년 순환을 나타내었다. 영양지는 지속적으로 출현하였으나 생식지는 1월 중순부터 4월초까지 적은 수만이 출현하였다. 포기거머리말의 개화기는 2월 중순부터 시작되었으며, 4월초에 성숙한 종자가 출현하였다. 해수내의 질산염과 인산염의 농도는 계절에 따른 차이를 나타내었으나, 암모니아의 농도는 계절에 따라 다양하게 나타났다. 식물체의 형태적인 형질과 이화학적인 형질은 유의한 상관관계를 나타내지 않았으나, 포기거머리말 생식 단계와 생활사는 수온에 영향을 받는 것으로 추정된다. 덕산항에서 포기거머리말 군집의 생육밀도와 지상부 생물량은 각각 511.6±25.6 shoots m^(-2)와 413.4±19.8g dry wt m^(-2)로 추산되었다. Abstract - From March 1998 to August 2000, the phenology and morphometrics change of Zostera caespitosa Miki were examined at the Duksan Port in the eastern coast of Korea. Morphometric characteristics (shoot height, leaf length, sheath length, leaf width, and number of leaf per shoot), size and number of reproductive structures (spathe, spadix, and seeds), shoot density, biomass and physiochemical parameters (water temperature and nutrient concentrations) were measured. Significant differences between months (p < 0.05) existed for morphometric characteristics except for sheath length. The sequence of shoot heights clearly showed cyclical annual variation with water temperature. Vegetative shoots of 2. caespitosa were present throughout the year, but reproductive shoots were rarely occurred from mid January to early April in water temperature of 9- 12℃. Flowering in the spathe began in mid February, and seed maturing was occurred in early April. Water column nitrate and phosphate concentration showed seasonal variation, but ammonia concentration was variable with season. Relationships between shoot morphometrics and physiochemical parameters were not significantly correlated but water temperature seemed to regulate the reproductive phase and annual life cycle. The mean shoot density and above biomass of the populations were 511.6±25.6 shoots m^(-2) and 413.42 19.8 g dry wt m^(-2), respectively.

The polyphenol fractions of Korean ginseng were purified using Sephadex LH-20, MCI gel, Bondapak C_(18), TLC, and HPLC from the 60% acetone soluble fraction. Fraction I showed 48.16%, 79.71% and 43.55% inhibition at 150 ppm against lipid oxidation in the presence of copper ion, superoxide and hydrogen peroxidation. Electron donating abilities of fraction Ⅱ showed 35.17% inhibition at 200 ppm. Fraction Ⅲ showed 48.49% and 25% inhibition at 150 ppm against lipid oxidation in the presence of ferrous ion and hydroxy radical ion. The phospholipase A₂ inhibitory effect of fraction Ⅲ was 48.9% at the concentration of 60 ㎍/m/. The cytotoxic effects of fraction Ⅱ was the highest (73.29% at 0.25 ㎎/m/) among the tested polyphenol fractions.

Response surface methodology (RSM) was applied in roasting processes of perilla leaves to develop a high quality perilla leaf tea. The Hunter color parameters and electron donating ability were monitored to optimize organoleptic properties of perilla leaf tea. The roasting processes were based on the central composite design with primary variables-roasting temperature (140~220℃), time (5~25 min), and reaction variables-sensory test, electron donating ability. From the variables, the roasting condition was optimized using statistical analysis system (SAS) program as developing the functional tea using perilla leaf. Hunter color L and b values of the powdered samples increased with the roasting processes, but Hunter color a value decreased. Electron donating ability was influenced by roasting temperature (p<0.01) and time (p<0.01), and optimum condition selected was at 220℃ for 15 min with coefficient of determinations (R²) above 0.98. After preference test of perilla leaf tea using parameter of taste, color, and flavor, we can estimate that the optimal roasting condition of preilla leaf for function tea manufacturing are 210~220℃ for 10~20 min by response surface methodology (RSM). Tyrosinase, xanthine oxidase and electron donating ability were 10.14, 14.37 and 59.19% of perilla leaf tea.

Biological activities and anticarcinogenicity of Korean Pear peel were investigated. Electron donating activity and superoxide dismutase (SOD)-like activity of fraction Ⅱ, Ⅲ were up to 80% and 50~60% at 50ppm, respectively. Inhibitory effects on xanthine oxidase were about 80% at 50ppm, breast adenocarcinoma was about 60% at 2,000ppm, higher Ⅲ than Ⅱ. Inhibitory effect on prostate adenocarcinoma was about 23% at 500ppm. In conclusion, Korean pear peel was expected to use as a functional material.
