Purpose: Although excessive intake sugar may increase the overall energy intake, it leads to a reduction in the intake of foods containing other nutritionally adequate calories. Excessive sugar intake can also lead to an unhealthy diet, weight gain, and risk of metabolic disorders. The purpose of this study was to assess the recognition by college students, their frequency of eating sugar containing foods, and suggesting sugar reduction in the menus of institutional foodservices. Methods: A questionnaire was used to survey 145 college students to evaluate their recognition and eating frequency of consuming sugar containing foods. Subsequently, sugar reduction menus for institutional foodservice were suggested. Results: Most of the subjects (80.0%) were aware of the meaning of sugar reduction. The necessity of reducing sugar in their meals was recognized by 57.8%. These participants tended to check nutrition labeling more. Eating frequencies of sugar containing foods were not significantly different by the subjects' BMI, but they were significantly different by gender, when evaluating cooked foods. We suggested 20% sugar reduction recipes of Korean style barbequed pork, and sweet and sour chicken for institutional foodservices. Conclusion: The awareness of college students and the knowledge regarding sugar reduction were low. Sensory acceptabilities of Korean style barbequed pork and sweet and sour chicken were not significantly different, until the benefit of 20% sugar reduction was mentioned. Thus, continuous education for reduction of sugar intake are required, and also efforts are needed to develop menus containing less sugar.
다문화 가정을 위한 교육지원 제도 개선 방안에 관한 연구

Practical education program for immigrant women that connected regional characteristics was needed when educational support program for not only multi-cultural family but also immigrant women varied. The purpose of the study was to investigate educational support and immigrant women’s satisfaction with education policy and to find out reformation of practical education program. The study investigated education participation factors, areas for education, reformation and consciousness on education policy of immigrant women who joined education programs of organizations and groups, and it gave educational directions for immigrant women. There was a gap in educational support for immigrant women between urban cities and rural areas. Each multi-cultural family had different educational support and requirements. There was a difference at each married immigrant woman’s request depends on the length of her visit due to her age, whether under thirty or more than thirty. So, the study investigated the difference of answers depending upon variables by using cross-tabulations between urban cities and rural areas. The findings could give various kinds of reformations on education directions for immigrant women.
『하얀 악마』의 비토리아 연구: 사회구조의 희생자로서의 여주인공

This study is to scrutinize the social structure which surrounds Vittoria, the female protagonist in The White Devil, and the process through which she is defined as a victim. The White Devil deals with the struggle of a woman who refuses to be unjustly defined as a "whore" or "devil" by the patriarchal society. Vittoria tries to keep her selfhood by revealing the fact that her social identity as a whore is not based on any truth but socially has been "constructed" by patriarchal authorities. Dramatic methods, such as the trial scene or arguments, clearly show us the way patriarchal authorities fortify the oppression of women by "constructing" female sexuality as socially destructive. On the other hand, because Vittoria defends herself with the same rhetorical strategy as her accusers, which hides truth under the cover of authorities, we cannot simply evaluate her as an admirable heroine who overcomes the oppression of a patriarchal society. Nonetheless, Vittoria's effort to keep her selfhood, or in other words, her powerful self-assertion, is a subversive energy which can pose a fundamental question about the basic structure of patriarchal society, revealing the hidden mechanism with which patriarchal authorities dominate womankind. This study is about John Webster's attitude towards the chaotic world of the early seventeenth century in England by examining Flamineo, a villain character in The White Devil. The world that John Webster's The White Devil reveals is a dark one governed by Machiavellian power structure in which its appearance and reality are different and evil prevails. Flamineo, as a villain character, is a frustrated intellectual that is alienated from the power and constantly strives to attain the power to no avail. Flamineo epitomizes the whole class of Englishmen whose ambitions for public service produce only disenchantment. He typifies the plight of the intellectual in the world of state, at once its agent, and its victim. Through Flamineo, Webster severly criticizes this situation which intellectuals encounter in the society in which they cannot be provided with a place to use their talents and fulfil their sense of self-esteem and honour. In conclusion, Webster satirizes through the dramatic type of scholarly malcontent, Flamineo. Jacobean England where moral values and political aims were corrupted.

This study aimed to investigate the influence of physical environments on menu quality and service delivery in the coffee shop settings and to explore the impact of physical environments on overall customer satisfaction, Using a self-administered questionnaire survey, 376 respondents who have ever visited a coffee shop in Seoul and Kyunggido were used for this study, The results showed that physical environments had a positive influence on other service environments, In addition, physical environments enhanced the customer satisfaction with the coffee shop, The findings suggest that every physical environmental element at the coffee shop environments should be managed appropriately so that coffee shop customers have satisfactory experiences.

This study evaluated the effect of nutritional improvement of 0~5 year children of financially poor families after nutrition supplement of children and nutrition education in parents/guardians. The subject selected among applicants for lowincome family financing of the government included 198 children (0~12 months:92, 1~5 years:106), and the average ages were 5.3 months and 2.4 years respectively. Food that includes each nutrient factor was provided to the subject for six months. Nutrition education was performed in two ways, through class and private education, once a month for both. Nutritional improvement was evaluated by body measurement and anemia prevalence rate. As to the survey on breastfeeding, complete breast-feeding accounted for 58.7%, weaning food 27.3%, and combined feeding 14.1% respectively, which shows that breast-feeding accounted for the largest percentage. The education program improved knowledge and attitude of the parents/guardians, which brings in positive effects on growth of children as well. The nutrition knowledge score was improved after nutrition education in 0~12 month children (8.5 ± 1.75 to 8.9 ± 1.69) and 1~5 year children (7.3 ± 1.39 to 7.8 ± 1.30). The nutrition attitude score was significantly improved in 0~12month children (52.0 ± 6.99 to 53.5 ± 5.21, p < 0.001) and 1~5year children (45.1 ± 7.30 to 49.0 ± 5.96, p < 0.001). In evaluation on nutritional improvement based on body measurements, it turned out that the wasting was reduced as for children in consideration of the height and weight according to the subject`s age. The concentration of hemoglobin after the nutrient treatment for six months was significantly improved, and the anemia prevalence rate as well was reduced from 40.6% to 13.5%, which indicates the significant improvement. Based on the findings above, it turned out that providing quality food to children and nutrition education to the parents/guardians poorly fed in low-income families improved knowledge and attitude of the guardians and prevents anemia and improves growth, which brings in positive effects on growth of children. In the results regarding attitude and knowledge on nutrient/dietary life; however, the improvement level was relatively low when the extent before the education was too small, which indicates the need to revise and complement the contents and methods. In addition, as shown in the result of body measurement, long-term and consistent investigation is necessary since it is difficult to judge the effect on growth only based on short-term nutrient supplement.
